I've been walking a lot and watching what I eat for some time now.I'm trying to get my weight down,and keep my sugar level down as well.So far I've lost over 30 pounds..Walking almost a mile and a half a day isn't easy for someone who is 78 years old and has had a hip replaced,but i'm determined to do it..That's the physical part of this endeavor..The other part is mental. I've had to quit eating a lot of things that I really like..I've made no secret to anyone that at the top of this list is Carrot Cake..Today my neighbor brought me a piece of ..you guessed it..Carrot Cake..She said I know it's your favorite enjoy it..Of course I did eat it..First time in over a year..I feel a bit guilty about it but it sure was good.

I like the frosting with walnuts or pecans the cake not as much.

Ive had carrot cake on my mind for a week now. I dont know anyone who makes a good one. I doubt if they are still in business but the Shabazz Bakery in Oakland California made a killer Carrot Cake. No white flour, whole wheat only no white sugar, turbinado no egg whites. no white baking powder or baking soda. I do not know how they leaved the cake but ti was light and fluffy.

I love carrot cake. In fact, almost all cakes and I get along well, but carrot cake is primo.

Carrot cake should have walnuts. Never rasins,except on special occasions. But always always cream cheese icing!🤗😘
