Milk pairs well with tobacco, in my opinion...I have a feeling this might only be MY opinion. I like it too. I found a KBV blend with more citrus that I like so I had some milk while smoking it cut the citrus part of the profile down to where I enjoyed the blend much more.

I usually smoke aromatics and sip water now and then to clean my palate. Keeps the tobacco flavorful. And this works for non-aromatics too.
I don't drink much coffee with tobacco since I drink coffee in the morning and usually don't have a pipe until the afternoon or evening. I do remember once last summer, having coffee and a pipe together and it was great combination - but there was hazelnut creamer in the coffee and I don't remember which tobacco I was smoking.
Soda doesn't work for me. It works just the opposite as water. Soda saturates my palate with sweetness and flavor drowning out the tobacco flavors. Wine is absolutely terrible with tobacco. I haven't tried Bourbon with tobacco too much - but it seems to be hit and miss. It goes with some tobaccos but not with others.

Some pipe folks I know have that tobacco jones going first thing in the morning. Not me. I don't know why but I have never had a tobacco craving where I had to have a pipe. I think it might be because I never smoked cigarettes. Just missed that whole cigarette thing. I will agree that the first pipe of the day, at whatever time that is, generally tastes better than the rest.
I have not ever had much of a whisky craving either. I pretty much take it or leave it. I love the taste, but I am past the point that I love the effects. I drink just enough to make everyone interesting, and that's it. I love what I love.
Discovered that any kind of whisky right after a pipe would rude out my tongue. So for me it is bourbon first, then tobacco. The other thing I can't do is carbonation after pipe. Club soda, cola, anything with bubbles rudes out my tongue after a pipe. If I let a can of Coke Zero go flat, (real two day flat), it tastes great after a pipe, and is a pairing I recommend.
Coffee, now that is different. If I don't get my coffee first thing in the morning, I am hard to deal with. Everyone knows this, and puts up with me till I am sufficiently caffeinated, at which point I may have some 'poligizing to do. I once tried to quit coffee. It was on a Friday after lunch, and by Saturday I had offended everyone I knew and decided that me quitting coffee was not in anyone's best interest.
That said I do love the taste, and usually have a cup not far from my right hand just about away all day long. And I pay as much attention to different kinds of coffee as I do tobacco. No I don't keep a journal or anything, though I greatly admire those that do. Probably no better way keep track of lessons learned and sort out what you really really like.
I am getting to that age where I can almost count the maximum numbers of pipes I will ever smoke, or coffee cups I will ever slurp. It is a fantastically large number, (Good Lord willing), but it is not infinite. I am going to enjoy everyone darn one of them.

I enjoy a good scotch while smoking, and it usually seems to complement each other for me. Coffee and pipe....good. Good black tea and pipe...good. Crisp bubbly soda and pipe....good.

I used to enjoy a pipe and a spot of bourbon in the late evening before turning in. Sitting out on the back steps if weather permitted. Life is less leisurely these days.
I really don't remember if the flavors enhanced each other, or if it was the experience of relaxing and letting the night calm me that made those moments so good.

I can't say as I've paid close attention to what pairs well, but I'll venture to disagree with Zach on purely personal and anecdotal evidence. While I do enjoy coffee (my students and coworkers both have admitted astonishment at my pot-or-so-a-day habit), I enjoy whiskey with a pipe far more than I do coffee and a pipe. I wonder if this has anything to do with my predilection for English/Balkan blends. Do people who predominately smoke aromatics prefer coffee with their pipe? Do English blend smokers prefer alcohol as an accompaniment? Also, I wonder what the differences in how one drinks their coffee affects their choice. I prefer mine 'hamartiological;' hot as Hell, black as sin, strong as death, and bitter as iniquity. Is there a statistically significant difference between people who adulterate their coffee and those who do not in their preferred tobacco blends? I sense the basis for a good research study here... I love Balkan/English blends. I was smoking Black House, when the wife said “That smells like those peat whisky’s that you drink”. I love Islay whisky, such as Lagavulin, Ardbeg An Oa, Bunnahabhain, Laphroaig and Bowmore. I do notice drinking an adult beverage and pipe smoking can be rough on the tongue.

It is strong, has chicory in it and after spending years with beans and roasters and all the fancy stuff, nothing compares to Du Monde. I drink 2 30 oz Yeti's full of the stuff every morning and I usually smoke a nice mild Virginia to go with it. The shite is not expensive, 7 bucks for a 15 oz can. I make mine strong, I don't follow the instruction on the can as I know how strong I like it.
If you have never tried it, give it a whirl. Something being made since 1862 has to have something going for it. If you ever get to New Orleans, you gotta stop there. It is open 24 hours a day 7 days a week and 365 days a year. It is a cash cow.

My relatives who live in the area won't go anymore.

Just a contrast to point out.
Every town, especially if there is a college near by, has various kinds of coffee house establishments. There you can try coffees of a range of tastes and flavor, and likely there you can find and purchase whole beans, that when prepared conscientiously produce a coffee that will delight you every morning. This:
" the Catholic clergy called coffee “the devil’s brew.” They encouraged Pope Clement VIII to place a ban on coffee but upon taking a taste he declared it was delicious, even joking, “We shall fool Satan by baptizing it and making it a truly Christian beverage.” On the strength of the papal blessing coffee houses rapidly sprang up throughout Europe."
It just tastes that wonderful.
Every town used to have various kinds of tobacco shops. And there you could try tobaccos of a range of tastes and flavor, and likely find a mixture that when properly ensconced in a pipe and enflamed would produce a superb smoking experience.
Despite the internet and all the wonderful coffee you can get there, the local coffee shop is still alive and well and serving loyal customers.
Because of the internet, and of course confusing and contradictory smoking regulations, tobacco shops are on the endangered species list.
I am not a business man, but would it not be wonderful to live in a town with both coffee shops and tobacconists. Yea sure. Like finding a store that sells surplus electronics and parts.

Just got my can of cafe de monde in from Amazon pot just finished brewing. Not a big coffee person but it smells really good in my house now. Initial impression so far I like it. Damn enablers around here lol.
