I admit that my tastes in pipes are all classics. I have no desire to own pipes that look like a pile of sht. Here are my favorites.
Billiard
Dublin
Apple
Rhodesian
Lovat
Bulldog
Almost all of my pipes are from one of these categories.
Call me boring or old mans shapes but well executed classics in my opinion can't be beat. I may be forgetting another classic style but off the top of my head these are my favorites.
Stuff like Tadpoles, Axe's, Free hands and the like do nothing for me. I want my pipes to look like a pipe and not a fish or a dolphin, or any other weird shapes.
Is anyone like me and stick with the classics or do you enjoy more artistic shapes? I can appreciate different styles and the work that went into them, but they aren't for my collection.

I am not into any of the wild shapes, especially by some of the Japanese artisans, I do like the Tsuge freehands I have, well executed and not wild.
90% of my pipes are the classic shapes that you mentioned, they are “classic” after all, I like a pipe that I can set on a pipe stand without getting ash everywhere and free up my hands when needed.
My Austrian lap pipes are fun to smoke during the holidays, my calabash pipes for a leisure smoke at home, and the same with my figural meerschaums.
I have some large bowled classic shaped briars that are great smokers that really do the trick with English blends, but I do not smoke English blends very often.

I like apples, bent apples, bulldogs, pokers, billiards, bent pots and brandy shapes as smokers and their aesthetics. These are the pipesI smoke. I like a lot of freehands, I hope to get a few in the future..the only thing I don’t personally care for are meerschaum pipes that deviate from standard shapes. I don’t like gaudy carvings. But then again before I smoked I liked smooth pipes, I thought some of my grandfather’s pipes that were rusticate or blasted were ugly. As an adult, I prefer the look and feel of rustication or blasts..

I like the ones with the big hole in the front an a little hole in the back, made from wood, morta, or corn cob.

I forgot about the Brandy shape as I do like that one.
Years ago I had all kinds of shapes and didn't even recognize a well made classic.
I used to hand out tat the Common Sewers over at pipesmokers.uk and I learned a ton from those guys. I miss that place.

Traditionally, my favorites have been the classic Lovat and apple. I am also a fan of Danish freehand pipes. Especially if they do a good job of accentuating the grain. I tend to prefer a military mount, although I find that the visual transition from stummel to stem can be hard to get right.
Lately, I find myself more interested in bulldogs and other pipes with angular shanks. I just picked up an older Grabow Westbrook that has a really nice triangular shank.

If that doesn't look like a pile of shite I don't know what does. That is so fucking ugly. The funny thing is that someone will fall in love with it and buy it. There is no accounting for taste.

I have had various preferences in the past but have always returned to the classic shapes. I particularly have a thing for the following shapes: Lovat, Apple and Bent Apple, Pot and Bent Pot, Billiard and Bent Billiard.
I would like, eventually, to add a Straight Dublin and a Straight Brandy.

Anything bent - probably sounds odd, but of ~70 pipes, I only have a couple that are straight.
I like "freehands". My Soren freehands smoke great.
Many of mine seem to be billiards, but I do like apples. They usually have smaller chambers - so they are great for a "shorter" smoke.

We have some similar tastes, Gandalf; I too prefer bent pipes, though somewhere in the 1/8- to half-bent range rather than full bent.
I've always liked freehands. Maybe that's the influence of coming to piping at the beginning of the seventies, or just a reflection of my own peculiar taste, or both. But I can appreciate classic shapes as well, and they include two other favorites, the bent bulldog and the prince. (My first three yard-sale pipes were one of each of those plus a bent billiard.) And then, as I've noted in my profile, Peterson pipes in general appeal to me and especially the 303 shape.
We've had a couple of mentions of finishes here as well. Like msokeefe, though later in my smoking life, I've experienced a change in my tastes. For years I only appreciated smooth finishes, but in recent years I've come to appreciate and even prefer sandblasts.

Those being my favorites, I also like the majority of shapes including the rarer eskimo, scoop, skater, tubos, etc. even though I don't have any of these shapes, yet. I like the Dublin alright but only have a couple in briar. I mostly smoke the Mark Twain cob though, which is a Dublin bowl and my favorite Missouri Meerschaum cob shape. Qiuckly followed by all the variations of billiard and chimney cob bowls for the most part.
