After several days of healthy eating it was time to fix that. BBQ brisket sandwich's and fries a man has to eat beef! Cause cottage cheese with fresh fruit with fresh salads with low salt soup/crackers is not doing it.

Breakfasted on fried rice made with eggs, diced ham, Chinese cabbage, scallions, ginger, garlic, rice, and a cooking sauce of tamari, Oyster sauce, rice vinegar, and chicken stock. In the good old fashioned way.

I have a can of Chef Boyardee Ravioli on the shelf and I keep one in the truck for winter emergencies. It can be warmed on the engine block. I keep a Kabar knife in the truck for a can opener. Using a bayonet or Kabar to open the can enhances the drama of being stranded, LOL! Chile con Carne and Beef Stew are also good provisions for winter stranding. That does not happen much any more here but one must be prepared.

Chicken marinading for shawarma tonight. Homemade spicy carrot hummus and tzatziki are made and in the fridge. Jr and and I are going out today for some live music and football and then home for an easy dinner.

Started with a recipe for Tuscan bean soup, and riffing a little with the addition of a few more vegetables. Pasta and sourdough bread on the side. A Tuscan red wine will accompany.

The kale is usually chopped into itty bitty pieces so you will hardly notice. I like to make it with escarole but good luck finding that here. Sometimes I use Swiss Chard.

I remember when I went to make a clone of olive gardens zuppa toscana about a decade or so afo we (my dad and I like to cook) had a hard time finding the kale because at the time it was primary used as a garnish either for a salad bar or the produce section. Guy at the store w a like "kale no one eats that we use it line the displays of the vegetables"
