Red Beans with Andouille and yellow rice. Some of the last Swiss Chard from the garden planter. There are a couple of old Chicken wing leftovers from long ago. Well aged.

You have to deal the hand you are dealtโฆ it was pretty good but I know better than ordering their brisket.
if you ever have Texas brisket, you are ruined for life.
I keep tryin at home, but it is like chasing Rembrandt when you have a paintbrush for painting fences.

local place does a decent brisket its no texas brisket as nothing else is but its pretty good. Someday ill try my hand at smoking one.

I have always hit a stall that is frustrating, and everyone really liked it, but when you had really good brisket, you are critical of anything less. As a cook, you are always the hardest critic. Not to dissuade you, carry forth and I have no doubt you can pull it off. If you master the brisket, you have arrived!

I was gonna ask what kind of lighter one needed for that. The freeze dried soups smoke OK if you find yourself in a pinch. I recommend the potato without the cheese. The potato cheese bites something awful.

I think for the price of the meat its going to be a while before i attempt it. A chuck roast works for practice. It's a little "beefier" than brisket but smokes up nicely.
