I just signed up for one of those prepared meal delivery plans. I need to eat better. The one I did was Factor and it's a keto/paleo type plan, mostly. I'm still gonna have carbs in my diet. They just won't come from my meals, much. I'm a difficult eater, so we'll see how it goes. First delivery will be March 12. Sounds like a good move, Urb. I have often thought of doing this. The convenience. You can still cook the special stuff on occasion but the basic daily meals are ready.

And as somebody who gets no particular joy from food, it's very hard to motivate myself to spend much (or any) time preparing it and cleaning up after. This ain't cheap, but maybe it'll be worthwhile.

The smothered ribs came out great. Ate half of a full rack glazed with Rufus Teague sauce. Yam and broccoli on the side.

After brief thinking about it, decided to bake cut-up hots & beans, oven now pre-heating. Take longer than nuke but then again, tell time with a calendar. Sure to be some aromas later. Still quite cold at 21, follow up, store brand tea & choco cookies at TV.

I loooove fish and chips...went to a restaurant, ordered fish and chips and asked for malt vinegar and the waitress gave me a puzzled look. Went to the manager and they did not carry malt vinegar....I knew I was doomed. On a better note I ate at the Yardhouse, (chain restaurant, might be near you) and it was exceptional...once Britain allows Americans to conceal carry I will give a review from Picadilly square....be patient, it might take awhile. Now that I have a nice deep fryer, time to try my own...already have the sauce, good stuff.

Waiting for the brisket to get done...changing my stance, got hungry...I wondered why this has staying power and it clicked. The sauce is really close to French onion soup which is a favorite of mine. I lack the hard sourdough, and Gruyere cheese, but it is really close otherwise. Thanks to America's Test Kitchen, they really put out a fine cookbook...if you can follow directions, you will be rewarded frequently.

Doing a Brisket in the Crockpot, that is kind of sacrilegious to not put it on the smoker,but: The brisket is a 3 pounder that came in a gifted meat shipment of grass-fed beef, not doing a slow smoke for that quantity, and the fat was pretty much denuded.
The recipe looks pretty good, added potatoes, going to add crinkle cut carrots at the end, and thicken the sauce.

There are a lot of places to get fried fish here, but not the English style. I miss the very unhealthy Long John Silvers fish. We had another chain around Houston years ago, called Archie's or Andy's. There's a place in Jefferson that has an English chef, (didn't know that was a thing), and he makes good food, but he only has one fish and chips on the menu and it's with shrimp and costs $25.

Yeah, all my deep frying is done outside. I learned early in life that three days later, the softened corn tortillas for enchiladas are not a welcome smell.

I've hot the electrician coming out to discuss a better vent for the kitchen. Have a microwave over the cooktop so there's nowhere for the smoke to go. I'm talking about something that will lower the pressure in the house so I can feel it.😁
