Just ate at Paula Deens in Branson. Oh man! Fried chicken and catfish, candied yams, green beans, corn on the cob, poppy seed salad and buttermilk biscuits with garlic butter. Peach cobbler to go. Nap now. "Nap now"...well I guess so !

Got the smoker on line y’day and did a couple of racks of spare ribs. Overdid them by a little bit but they were still pretty good. The next batch will be better. They only took 3 hours. I did not use the water pan but did use plenty of hickory chips. I was pleased that the smoker held its temperature very well throughout the cook. This could get addictive.

I’ll use the water pan on my next experiments as the meat was a bit dry. I went with charcoal rather than electricity because I try to minimize my reliance on the grid. I am not a prepper but I recognize the risks to grid reliance. I am blessed here with a sustainable supply of wild meat and a year-around supply of pure surface water, not to mention a shallow well into the aquifer. Why compromise that?

Tried Jolly Posh Scottish Lorne Sausage this morning with one fried egg, a potato patty and my own hash of Parish Rice, red lentils, diced scallions and Iberia brand tinned corned beef. Small portion of the hash just taste if it was worth making and it is. The JP Lorne sausage is excellent. For you JP buyers, check it out. Appetite is still good, thankfully.

They were very interested in the whole process. They were even more interested in the final result. I wish I could give them the bones but can’t do that. They are very disappointed. But I make it up to them in other ways.

Tonight's frozen meal was something called "Peruvian Chicken", with broccoli. Don't ask me what was in/on it. It was a mildly spicy chicken breast. That's all I know. Oh, and broccoli.

Biscuits with pan sausage, fried egg and a double k-cup of coffee. We really miss the cooks at the Best Western. Staggered in every morning for a plate of scrambled eggs choice of 2 kinds of sausage and biscuits with gravy. Many options if you were feeling like putting your own breakfast together.
