Lunch was at nooner cafe in Eureka ca. I had pulled pork sandwich Deere had burger. This restaurant was featured on Diners Drive-in and Dives. I asked the lady taking the order if the cook had time to say hello. The cook who is in charge came out for a short visit then returned later for a 25 min visit and desert. He is the son of my highschool English teacher who I still visit. Gave me a hug before we left. Tomorrow is Dad's celebration of life.

Usual few munchies so far, store brand frosted mini-wheats & mixed nuts. Starting to organize for big brunch with the 'ol gals around noon-ish. Same easy/fast cleanup after, more adult activities time for

Thinking on making cornbread to go with my pot of Chili con Carne. Likely in the Southern Style. Iron skillet, splash the butter on top for baking. Not too sweet. Come to think of it I got rid of all my sweeteners when I was diagnosed with Cancer.

I also add 1/4 cup of uncooked grits to the batter. I like the texture. That is just me. Sweetened cornbread is corn pudding.

Spicy McChicken and a medium fry came to like 5 bucks on the McDonald's app. Winner, winner, chicken dinner! I really am a coupon hound/App special, when I am not on the company dime...it really is crazy not to avail oneself of them options, regardless of how often you eat out the discounts are remarkable. Tip: A lot of restaurants allow you to claim the rewards by simply putting in receipt info on the app after the fact. So if you go with a buddy that spends $50 on a meal and you spend $15 and he does not do the rewards, ask for the receipt...(I do not want to pay for company meals through the app, as I don't want to inadvertently charge non work related meals on the app to the corporate card.)

Probably have beans & weinies around 6pm, small portion. Just mentioning, I have not ever found "apps" on my basic Tracfone flipper. Anybody come to my house near Buffalo, NY & welcome to try & find 'em! Just button pushing that leads me nowhere

Cornbread came out fine. Lack of gluten makes it crumbly. Adding flour is not the Southern way but I may have to add some.

Down to the end of my cornmeal. So, I ordered ten pounds of White Lilly white self rising on Amazon. Processed in South Carolina with a tad of their biscuit flour for cohesion. A little gluten does help cornbread. Their biscuit flour is the best I have used. Good for pancakes, too, although no syrup in my diet. So, diced fruit or berries.

This being Sunday, a bunch us went on up to San Luis, CO to visit Mrs Rios Thai Kitchen. Tom Yum soup with vegetables and Cashew Chicken, Thai style. I even treated myself to one of their tall lime sodas with a healthy measure of Gin since I was not driving. The proprietor pours a stiff drink. I cannot overstate how blessed we are having these Thai folks here.

The last batch of the recent smoked ribs. This was an especially meaty rack. The pups were MOST attentive. I stripped off the remainders and put them in their bowls for the morning meal.

Dinty Moore chicken and dumplings. How was it? Were there chicken pieces? I would stock it for emergency use but was not sure it was worth the price. There beef stew is OK and worth having on hand.
