Thinly sliced Chuck Steak with eggs and hash browns. Meant for sandwiches I guess. Fold it over twice and it becomes more steak like. On sale. Would be good in a tortilla, so tomorrow....

We're getting ready to go to our daughter's house for a hamburger 'n hot dog event. Because both my wife and daughter have birthdays a few days apart, it's a double-bill celebration. Happy Birthday to your wife and daughter! Hamburgers and hot dogs are my favorite summer meal! |

Oven pre-heating to 400 degrees, 4 chicken fillets & earlier bought new bag of tater-tots bake, cup of mix vegs nuke. Aiming at 6pm, eat & newsfeeds. Usual store brand tea & choco cookies later, depends how long stay awake!

Lunch was a red chile pork tamale from the tamale king of Albuquerque smothered with the last of my own Chili con Carne.
After that, I am not planning any dinner...

Micahel Angelo's Eggplant Parmigiana on a slab of crispy tofu fried in EVOO. Whole wheat spaghetti on the side. For 35 years I have enjoyed this eggplant of theirs. Still the same despite the company being sold to an equity investor group. May they never change anything.

Still the same despite the company being sold to an equity investor group. May they never change anything. I want to fry some eggplant like my mom did, but the family won't eat it. She just dipped slices in egg then cornmeal with salt and pepper and fried it golden brown. It was years before I figured out that the "treat",like fried bologna, was just because we couldn't afford meat. My mom could stretch $86 bucks for the the whole month. My SS check went to the house payment. I was always clean and dressed better than most of my classmates. Anyway, yeah, I'm the only one who eats eggplant around here. |

About to prepare White Beans with Andouille, Cajun style. From the "Deep South Dish" website. Using Navy Beans as that is what is on hand. Then CORNBREAD made with White Lilly Cornmeal. There may not be a drop of Southern Blood in this old boy but I sure appreciate their cuisine.
