CFS came out perfect. 1:15 minutes per side. 8 ounce steak pounded thin. Drizzled with lemon juice. Baked potato with butter and yogurt. Spinach salad with Roquefort.

Had the cowboy scramble ( pit smoked ham and other ingredients) at the Horseshoe cafe in Benson this morning, comes with the huge biscuit and gravy. Still had money on the corporate books, got a hefty Carne Asda Burrito from Filiberto's for lunch. Tonight, leftover burnt brisket tips from Costco and potatoes with corn...pretty decent, kind of pricey.

I have never tried making that myself...when ordering at a restaurant, it is either really good, or so-so...I suppose few restaurants do it the right way.

I have never tried making that myself...when ordering at a restaurant, it is either really good, or so-so...I suppose few restaurants do it the right way. Not hard to make. Good with Round Steak or Chuck Steak. Need a meat tenderizer mallet.. Pound it thin, sprinkle flour, dip in a wash of egg and buttermilk, dredge in flour or bread crumbs. Skillet needs to be good an hot. Smoking. I use peanut oil. A minute or so per side et voila. I skip the gravy as it that add to many fat calories. Just lemon squeezings like with a Schnitzel which is what CFS is derived from.

Dinner's in the oven. We're making a frittata with bell pepper, green onions, mushrooms, chorizo and cheese. First time doing this. Riffing with the ingredients ingredients on hand.

A patient named Rosita hooked me up with a couple plates of enchiladas, rice, beans, and tamales for me and the wife. All packaged in commercial to go containers… she showed me her stash from Smart and Final. (An LA based cash and carry store that caters to restaurants)
I asked her where the Margaritas were, and she shook a spoon at me.😂

Well, we make a lot of vegetables and they carry over for 3 or 4 days sometimes. Was it you that recommended Big John's jerky? I just got 2 pounds and it's pretty good for the price 8.5/10 compared to Buc-ees and 30% cheaper. Makes me glad I spent all day Monday in the dentist's chair.

Typical Saturday morning… New Yorker Bagel.
These are better than a same day bagel from an Einstein Bagel store. 4 minutes baked at 400° in the Ninja… Bagel perfection.

Last night supper was fresh pork butt, roasted with just a slight dry rub and crushed black pepper, with roasted golden potatoes, and tiny green peas. The rest of the pork became pulled pork with the aid of more dry rub, and some homemade sauce...tonight's menu is just guesswork at the moment, but the pork will come in handy Monday or Tuesday.

Kind of a Charcutier Plate for supper. Foie de Canard Pate, Braunschweiger, sliced Pastrami Hungarian Style, Goat cheese, Cotswald Cheddar, baguette, salad of Garbanzo beans, cherry tomatoes, olives, red onion, diced zucchini, Feta Cheese in olive oil with lemon juice.
In honor of all those Frenchies who did not survive the morrow! Actually, they were Foreign Legionnaires, so not French at least most of them.

Went to our favorite chef owned and operated restaurant for dinner tonight. I had a great 8oz Bison Tenderloin (rare) with a red wine demi glaze, mashed potatoes, and asparagus. My wife went for Carbonara with crumpled sausage.

I remember Woolworth’s lunch counter had the best Braunschweiger ever. It was a real treat to go with grandma downtown on the bus for lunch.
