It's braised boneless pork ribs with sauerkraut and carrots for dinner tonight. Always a favorite here.

Great news Urb & Tosh! 😀 The CEO of our hospital came around with coffee and treats to say "thanks" to our department so I'm having some cheesecake with coffee. I appreciate the thought but I think you mean Ron & Tosh. That's what I said!! 😂😂😂

Santa Fe for a visit with my Oncologist. News all good. PET Scan does not show new Cancer growths. Lunch at the Chinese joint nearby. Shanghai Noodles. This is new to me. A huge plate with crispy noodles topped with a pile of ginger beef, shrimp and chicken with lots of vegetables. Could easily feed three people with rice on the side. Brought some home. $14. I like this place. Glad to hear the good news! I had an appointment with a new urologist today. It was a good visit. He finally told me the results of my cancer screening from 3 years ago, actually listened to me and read my file. Xray and urinalysis, all clear. Not violated!! He also set me up with a nephrologist without me having to ask. The restaurant sounds good, but if we ever get back to Santa Fe, we probably will be looking for the best Santa Fe New Mexican food. There are a lot of good choices in that town. La Choza rates high. They also make great Margaritas I am told.

We just never seemed to stop there after that. We went to see Star Wars in the downtown theater. Came out of the threatre and it was raining so we ducked into a sheltered doorway. Man opened the door and asked us to come in. His wife insisted that we have tea. Turned out he was a famous Hungarian artist and this was his studio. We spent all afternoon with them and had a great time. I don't think they got many visitors. Anyway, an all-time great day.

Ate at Lou’s Dinner in Vegas for lunch…. The best patty melt on marbled rye I have ever tasted… the beef patty was remarkable. Really scrumptious.
Dinner at Those Guys pies in Vegas/ Summerlin/ Lakes…great execution on NY style pizza.
The cost of eating out continues to astound me, when I have to pay the freight it will be a lot of home cooked meals.

Brie on the last of the baguette. The last of the stew I converted to a soup with beef broth and V-8 Juice and added chopped Swiss Chard.
Soon I am going to make meat-a balls-a from my store of "Old Number 42" from a neighbors herd. She was reported to be a bit gamey so bread crumbs, herbs, diced red bell pepper, parsley, onion, spices are called for. Then a nice Marinara Sauce. Not sure which pasta. Have a nice shredded Reggiano Parmigiana on hand. About golf ball size. I usually brown them in olive oil before adding to the sauce. Hopefully not too close to these.

Tonight's dinner will be my wife's signature "Yummy Chicken": boneless skinless chicken thighs covered with salsa, sour cream, seasonings, shredded cheese, and then baked. Rice and an undisclosed veg on the side.

Fried Chicken tonight, with beets, from the stash we canned year before last, and a potato dish of some kind. oh man, that sounds good. I cannot think of anything better than real fried chicken. You got the idea...when I got to the table, my wife had made a thick, country gravy...white, with specks of black pepper and seasoning from the chicken, " to put on the dog food, but I made too much" is what she said...I tasted it , and honest to goodness, I'd go into business on gravy like that! As i wished for biscuits, I surrounded my taters and mushrooms with the gravy and dipped my chicken in it...rough life! for the pups that is...

I worked in the meat industry for 8 years, mostly all upscale meats but slurry has it’s place. (When done right) 😉

Tried something different this morning. Two eggs beaten with two teaspoons of yogurt. Then into a six inch iron pan with olive oil. Baked at 375 in the table top convection oven. Came out as fluffy and light as a cloud. Two link sausages, home fries and a tomato slice to accompany. This egg technique would be great with additions. I never was one for baking eggs but can see how the more even heat produces a finer result.
