It means planning meals ahead of time and aging the rice or pasta for a day or two or three. The question I have is if this resistant starch is fermented, what is it fermented into? If it is lactic acid that is exactly what cancer cells need to grow and reproduce. The Warburg Theory of Cancer. Need to study this more. Isn't the Parish rice resistant by design? Genetically engineering I believe. Actually it's not GMO, but a regular hybrid. Created at LSU, a strain called Frontière. They are working on a further improved version that should be out next year. 10.6% protein and resistant starch.

Tonight I had bourbon peach, pork belly burnt ends. What's the verdict? They were amazing. Meat/fat candy.

Tonight I had bourbon peach, pork belly burnt ends. And a Coor's! Restaurant’s image, not mine. No Coors passed these lips.

A late lunch in Taos at my favorite Mexican joint, the one with the real Mexicans. Chile Colorado. Beef chunks stewed in red chile gravy with beans, rice, lettuce, corn tortillas and jalapeños, still warm from the grill. And Lime wedges.

A green chile cheddar cheese omelet. Whole green chile pan grilled. I forgot just how good this is. Tomorrow will be the same with TWO whole chilies. The last of my potato, bean, onion patties. Good they were, too.
Soaking Navy Beans and have nice ham shanks, not hocks, on hand. Looking forward to that one. This means more CORNBREAD, of course. UNSWEETENED. I am giving the beans a two day soak in water with a corrected pH. Added apple cider vinegar to our alkaline water. Wish I had litmus paper!

Just cold plates for us today. Sandwiches, baked beans, potato salad, chips and cheese. Not the healthiest, but too hot to be heating up the kitchen. We're probably going to be eating a lot of salads this summer to avoid the heat.

Lunch was left over trip tip with beef and red chili gravy. Parish rice and lentils on the side. Part of a baguette to clean the gravy off the plate.

We're probably going to be eating a lot of salads this summer to avoid the heat. Reminds me of when I was a kid and Mom's menus changed dramatically in July and August to avoid heating the oven. Lotta spaghetti, hamburgers, etc., and cornbread got pan fried instead of baked.

Cuz John came down from his place and spent the day. Did some mowing for me and smoked a buffalo brisket and some chicken breasts. That brisket was incredible. Played some dominoes, too.
