"eat what you like, and like what you eat" Awhile back, my brother who raises chickens and eggs told me to start steaming eggs instead of hard boiling them, and the results are phenomenal. The egg whites have a better texture, but the yolks are so creamy, bright yellow and never rubbery with the gray tinge that can happen when boiling eggs...the shells tend not to crack in the boiling water as easy either. The creamy yolks make increddddddible deviled egg stuffing. Preferrably room temperature eggs, bring water to a boil in dutch oven lower basket with eggs and put lid on for 10-12 minutes. After pulling them out put the eggs in an icewater bath, and when they cool they peel pretty decently under water. You can make a variety of recipes with the eggs...tortillas and a few items from the fridge or cupboard and you have a pretty nice breakfast wrap.

I just slow simmer them.

My brunch plan is simple. Whatever is in the fridge that can't outrun me is fair game!

We consume a lot of hard boiled eggs, going to have to give this method a try!

My grandmother raised 21 kids, (my grandpas first wife had 4 kids, he married her sister (my grandma) and she had 17.)...many of the kids through the depression and it was pretty hardscrabble, so when the family was raised one of her life's simple pleasures was being able to cook up a feast at every meal.
Typical breakfast was: Fresh trout from the river that morning fried with head and tail on. Platter of fried eggs Platter of fried potatoes Roasted green hatch chiles Red pork chile Huge stack of homemade tortillas Soapapillas ( she called them bunuelos) Bacon Sausage Colitas sp? (A green wild plant native to Colorado high altitude) Pancakes
After we finished eating, within an hour or so she would start preparing for lunch.... same with dinner... did that till the day she left us when she was 90. My grandpa was blind all my childhood and pretty much deaf... she loaded his pipe for him also.

trailboss Sounds wonderful. I often think about the tables my grandmother would set while I'm making a turkey sandwich for dinner. Oh to be 35 and single. haha All jokes aside, I miss the woman way more than the meals. I often feel like my generation somehow let their generation down.

Eggs, bacon and sausage for brkfst Brisket and a salad for lunch Stir fry veggies and chicken for dinner. Lots of full tilt coffee and un-sweet tea and water for drinkin. I really missed the bread, pasta, potato's and ice cream at first. Pork rinds and jerky instead of chips and sugar free jello when I get a sweet tooth. Now down 35lbs, 15 or 20 to go. It's not that bad really. Cigars, pipes and the occasional beer or scotch seem to help me through it.

Yeah, me too cobguy.
I was keepin it pretty much in the 200 to 215 range but was in a car accident 2 1/2 years ago and got a bulged disc in my lower back. Months of therapy and steroids, as well as layin on my back and not doin anything, helped me pack on the lbs.
