Turkey meatloaf and roasted beet salad with feta and candied walnuts. No pipe since Saturday. Might have to change that tonight That beet salad sounds like something new I need to look into.

So easy and delicious man, really good. In the warmer weather, I put the beet slices on the grill coated in olive oil after roasting them and it adds a great taste and texture.

Just finished prepping my version of Beef Bourguignon. Now simmering in a Crueset kettle. I add extra vegies to make it more stew like but the recipe is fairly traditional, otherwise. Lotsa red wine and garlic. Photo to follow.

We were in the firewood business and sold only about 100 cords yearly. We were all a fairly toothless bunch given our ages. Each morning I would make scratch biscuits and sausage gravy, eggs too, before we headed up to the high country. I will never get over how much the guys loved those breakfasts. They all gone now. Any time someone mentions "Biscuits and Gravy" I remember those days.

Just finished preparing a pot of Green Chili with chicken.
The chilies were grown by a friend in Rocky Ford CO. They were left on the vines late and started turning red. Robust.

Just finished up roast beef with rice and beans (typical Brazilian staple) at my mum's house. Mmmmm... gotta love coming home. I would like to know more about Brazilian Rice and Beans. I am familiar with Puerto Rican style and New Orleans Red Beans and Rice. My dad normally used pinto beans. Soak them the night before and cook as normal. While they are cooking, chop about 4 cloves of garlic and half an onion and add to a pan with about 2 tsps of salt and a bit of oil. Fry them until the the garlic smells cooked (instead of smelling raw). When the beans are cooked, drain them and add to the pan of garlic and onion. Stir for a while and add about a cup of water and let it simmer for about 10 mins. If you want you can use a potato masher, lightly press on the beans just to put a very small crack in them. That makes the sauce a bit thicker. The rice is made using the same onion garlic and salt combo in a pan. Fry until the garlic smells cooked and then add the raw rice to the pan (rinsed to get starch out first). Stir for about 3-4 mins until the rice kinda clumps up as you stir and then add boiling water to the pan until it is about an inch over the level of the rice. Put a lid on and let it simmer until the water disappears. When the water level comes down to the level of the rice, give the rice a taste. If its still hard then add about a tablespoon of boiling water and put the lid back on. The rice and beans are normally served together and mixed with each other on the plate.

That sounds similar to the way "refritos" are made here. Naturally, chopped green chilies are included.
I often forget how much rice is improved before boiling with time in a pan.

Cereal and a mango with my nephew watching the first Mexican presidential debate. Some good points were raised although my nephew seems unconvinced by anyone not sporting a Paw Patrol sticker.
