Chicken gizzards with hot sauce and lemon juice for dinner. I had to work 12 hour days and it never gets any funner.
Here in New Mexico they would have been wrapped in a Tortilla as is most everything else. There are two questions concerning life in New Mexico which must be answered frequently:
1. Verde o Colorado?
2. Trigo o Maize?

I have had work assignments in New Mexico, centered around Silver City and Hurley in the copper mines. Stayed there months at a time, for a year or so. I fell in love with the place.
Since then i have Cholula's on the table with the salt and pepper at all times.
When I was there they had a local radio station in Silver City that played old country and bluegrass and all the lovely "high lonesome" music you could ever want. And the Buckhorn Saloon, in Pinos Altos. The Javalina Coffee House. Jalisco's Restaurant, where the sopapillas are as big as a camping pillow.
I was driving to Albuquerque cold morning, through the Black Hills, and I started to get sleepy. I pulled over to get 20 minutes of rest, and when I awoke my car was surrounded by cattle. Well two cows, actually, one in front sleeping, and one in the back sleeping. I am guessing they were attracted by the heat of my car that morning. I could not move the car without disturbing them, so I went back to sleep and 20 or 30 minutes later woke up and the one in front of the car had move to the passenger side. So I was able to drive away.
Pretty nice? Pretty nice is a free candy bar. New Mexico, at least the part I stayed, is one of those places where the heavens come down and touch the earth.

That sounds like New Mexico all right. It can get confusing driving through the Black Hills. Every now and then you cross a cattle guard. But I never see any cattle. Until this one time. I must have crossed an odd number of cattle guards.

Once in a budgetary discussion, the subject came about cattle guard expenditures on federal lands in Congress. An old nut bag wanted to know if they were union members.... An old co-worker of mine retired to Silver City less than a year ago, that got me to investigating... looks like a great place and a temperate climate to my liking.

Has anyone tried the Ore-Ida Crack A Egg? A simple, easy way to eat breakfast. Well I guess you could eat them anytime.

Big pot of Gumbo simmering.
Andouille Sausage Shrimp Chicken all the usual stuff starting with a dark roux made from bacon drippings.
Added some large dice Mexican squash cause me likey that. plenty of okra, of course. I would like to add cactus leaves, diced. Nopoles. This being the Southwest, you know. Nopoles act like okra with that thickening thing they do. Similar texture when cooked. Then there is a nice big diced Poblano chili in their along with the Bell Peppers. Home blended seasoning mix following Paula Dean's wise council.
All during preparation, a few bowls of Edward G. Robinson's Pipe Blend.

Terriyaki chicken, some homemade kale chips and a handfull of strawberry and almond trail mix. Moving on to the after dinner beverage: Jameson's Caskmates IPA barrel aged Irish whiskey.

8 hours over pecan wood. Moist and delicious! Now that’s GOOD eating👍👍👍. My son often smokes a butt or two when friends/family stop by. He makes an outstanding Vadalia onion pie. He takes after his Dad, the passion of cooking.

My step sister works there. For a quick, non greasy, fill up, that's where I go.
Vidalia pie? Sounds good. I love pie and I love onions lol.
And I LOVE to cook. My grandmothers taught me how to cook inside meals. I taught myself my way around a grill and smoker with a lot of trial and error. Over the past few years I've taught some others a couple of my secrets.
