I was in the mood to do some cooking today. Made “ My Homemade Sauce “, roasted garlic, many herbs and spices, sautéed sweet onion, 32 hand rolled small pork & veal sausages I put together stuffed with cheese. I’m NOT in the mood to make homemade pasta, so tonight it will be Barilla Fettuccine , my favorite dry pasta when cooked properly 👍👍

I didn't feel like cooking again, so I had a pimento cheese sandwich. The Smoked Gouda pimento cheese from Sam's is really good. Then I boiled a pound of extra large shrimp and had it with cocktail sauce. Unfortunately no wine because I can't afford the calories.

Walt, if I knew you were passing by in the near future I’d definitely freeze a large portion for you and your wife. It turned out fabulous 👌👍👍
Even though I’m Jewish I’m referring to this meal “ as my last supper “! The ex never cooks but finds something to complain about. I bring my pasta water to a rapid boil before dropping in the pasta. She told me to add salt....one, I’m on a low sodium diet. Two....I’ve never had to add salt to my pasta when cooking. I stir the pasta often, never sticks together. With the herbs and spices and heavy grated Parmesan cheese it was plenty salty for me. I gave her salt if she wanted to add some, she just threw it. She tells me “ your not Italian, all Italians add salt to the water. I owned a high end restaurant in Europe, made hundreds of pounds of pasta and cooked them ALL with no added salt to the water......never once had a complaint. Nobody ever noticed there was no salt in the water. She continued to yell at me, I told her enjoy....it’s the last home cooked meal I’ll ever make white living here....which won’t be long!! Oh, she ate her dinner and enjoyed every bite!!!

We had grilled pork chops tonight with a broccoli side dish that was broccoli roasted with mustard. It was really good. The best part was that Brandy cooked dinner while I was laying in bed drinking a Guinness and watching Sherlock Holmes and the Secret Weapon with Basil Rathbone

Dinner at a neighbor's house. Grilled salmon, Coho, I think. Home made gnocchi with home made meat sauce, beet greens sauteed in butter and garlic, an immense Caesar Salad with Caesar dressing made from scratch. I brought the vino which was a nice Rioja/Tempranillo from Spain. One perfect meal and so nice to eat with other people for a change.

usual Sunday doings. Later for "brunch" (will be by time wifie makes her appearance), a more or less scrambled mess of 4 lg eggs, small squares of strong cheddar & ham slices all in indoor Geo. Foreman grill. Not purty lookin' but sure filling. Usual Keurig k-cup cocoa. Wifie's be k-cup decaf. All dishes to just soak for couple hours while doing nuttin' important. Finish paper, play "guess their age" from magazine section, TV golf & sure a good snoozie in the mix

Just made St. paddy’s day breakfast for the wife and son. Little man had a shamrock protein shake with chia seeds and I made the wife Steel Cut Irish oatmeal made with Baileys Irish cream, brown sugar, raisins and walnuts. I’m having a pint of Guinness for breakfast.

Maybe someone might find this interesting and perhaps not.
I came up with a new spread ("Schmeer") which I like and is quite useful combined with other sandwiches and such.
Into a food processor or blends goes:
1/2 can of chickpeas (Garbanzo or Cecci beans), well drained,
1 four ounce can of Tuna packed in olive oil. Water packed tuna could work.
fine diced onion, 1/4 cup,
chopped parsley,
Juice of 1/2 lemon,
fresh ground pepper,
Olive oil as needed.
Puree the mixture adding olive oil to keep it moving into a paste.
Yesterday, I had a sandwich with just this and sliced tomato.
This morning I had it on toast with sliced hard boiled eggs on top.
This spread can be used to make other sandwiches instead of mayonnaise or with mayonnaise. I will add it to a steak sandwich later for lunch. It has a nice flavor and is less fishy than one might suspect.

A light snack of Irish whisky infused aged cheddar with sliced apples and toasted pumpernickel bread. Put the corned beefs in the oven and went to do some yard work. Back in the house, another Guinness and I made some Bushmills and Guinness spicy mustard to have with the corned beef.

Sounds great! I’d spread some of that on some crostini rubbed with a garlic clove and a slice of tomato. Gotta try this

8 ounce Prime Ribeye from Cosco , spinach souffle, smothered mushrooms, 1/2 baked potato, for dessert small cheesecake, whew haven’t eaten like this in a year.

NOT COOKING CORNEDBEEF and cabbage so I stopped at Arby’s and picked up to over stuffed Rueben sandwich’s, paid extra for more meat👌👍👍. Happy St. Patrick’s Day to ALL
