Had a left over gyro ...lamb from Arbys....wife toasted the bread and meat in the toaster oven then put the lettuce and tomatoes back on it...was better than the first day fresh...toasting the ciabatta bread made all the difference in the world. Their roast beef sandwich is really good, particularly if you get the larger size...plenty meat for me and doggie too. She likes the lamb better.
Hope you are doing better, Ted...may your days be filled with gladness. Your friends are here with you.

Stopping at a local diner for breakfast after my Labs. A couple of eggs over medium, home fries well done and sausage on the side. Only one slice of toasted rye and two cups of coffee sounds great👌👍👍

Bacon and Eggs on whole wheat toast. Bacon is from Canada and very nice, Boars Head distributes it. A little pricey but I do not eat it often.

Got down to the carcass of the Turkey Breast I smoked last week. Peeled off most of the meat, and simmered the split bones with whole onions with skin on, carrots, celery, whole garlic for a few hours. Strained all of that out through cheesecloth and dumped it, and skimmed the fat. Added spices, and fresh vegetables, simmered, the noodles and added the meat back to it, and added crumbled bacon before serving...it was good, will be better tomorrow. On a similar note, Better than dried boullion, very concentrated in a paste form...I highly recommend this stuff when a recipe calls for Boullion and broth.

I use Better Than Bouillon when I lack the time to make stock. Both chicken and beef. Good stuff. The best I have found.

I used to deliver to TraderVic's in San Francisco, and I would pick their brains on making stock....with a wife and kids to feed, it was a rare thing to afford to take the family to a place like that, so I stole some secrets...the benevolent chef helped me scurry some stuff out the back door....a bowl or plate every-time I called on them.

I was there a number of times from the 1960s through the early 1980s while Vic Bergeron was still involved. That was one fine place. Superb food, wonderfully imaginative drinks, attentive service and a unique atmosphere. You were fortunate, indeed, to have had a connection with them.
