Thanks! I was happy with how it came out, even if it wasnt my best. I was having odd issues during the cook so it was an all day battle with my smoker that any other day, it works how I know it works. But yesterday we had a guest over who has had BBQ from texas on over. I could not afford to fail. So of course, my smoker had to put up a fight. Later this week I'm smoking turkey and I bet everything will go as smooth as usual because I wont have an experienced BBQ eater to impress.

McWiggins........that brisket looks delicious, to many dry out that cut of meat. Yours is pure perfection πππ Toasting a half bagel and topped with cream cheese and orange marmalade.

Awesome looking brisket!
Got off work and was incredibly hungry which is strange for me when it's hot out. So I got home and made a sammich. 4 slices of ham, 3 slices of Turkey breast, 1 slice of swiss cheese, 1 slice of provolone, mayo and mustard. My stomach is now happy.
I got way too hot at work today so it's nap time before I go to an honors assembly tonight.

Been slow cooking a beef stew with many fresh vegetables and beans. In about an hour I will add a pint of sour cream. Will be served over egg noodles π

Just ate a quarter pound of People's Choice carne seca. Good price on Amazon, but it's that crispy, completely desiccated dehumidifier jerky. Not very good.

McWiggens...that brisket is beautiful...almost can smell it through the page. Had my mouth watering for sure!
Just finished some Graeter's ice cream..black raspberry chocolate chip...it was pure heaven! If you get the chance to try it you will be greatly rewarded for your efforts.

We gottem a new Asian joint in Toad, eh, Taos. So, I had some boss egg rolls and Pho Bo with Bison, tripe, udon noodles and lots of plant matter. The proprietor tells me they spend three days preparing the broth. It was mighty

I know exactly what you speak of...some days are better than others when manning a smoker, but it keeps you on your toes, and when you put in the time, it really pays off. My brother extols the virtues of his Traeger pellet smoker and how easy it is to smoke meat....the best foods I have ever had were not made by people that took the easy street. You never see Traeger units on the pitmaster shows, or barbecue championships...there is something to be said for using wood and coal and orchestrating that symphony. Not to say that Traeger does not have it's place for those that like them... Having said all of that I hope Mcwiggins doesn't say he uses a Traeger, or I am going to earn the chump of the month award.
