soon to be usual Sunday fare of eggs/little cut up squares of x-sharp cheddar & mangled low-salt ham. All in indoor GeorgeForeman grill. Side of English muffins. The usual fugly plates of mess but who cares. k-cup cocoa for me, k-cup decaf for da Mrs. Last nite she made sure that she wants it split 2/3 me, 1/3 her. With her ongoing chemo & most during the week "Meals on Wheels", she's down about 20lbs. Good start

Three strips of nice J.C. Potter sliced slab bacon from Union City, Tennessee, wherever that is, and Bush's Vegetarian Baked Beans. Since Bush has extra liquid in his beans, I fried up slabs of tofu in the bacon fat, fine diced and added to the beans. No sense letting it go to waste.

Suites on Hwy 35 going to Pecan Island, best Cajun and Seafood ever, Menu Outside on Wall To the right, used to be an old grocery store. You can rub shoulders with rice farmers, oil field workers, tourists, lovely place.f

Lunch today at the Beaver restaurant. I over did it. The Combo Plate: two green chile chicken enchiladas, a pork taco, a red chile chicken tostada, pinto beans, Spanish rice, fresh salsa, all irrigated with cerveza XX. Naturally, I had to eat every little thing. I will never learn and clearly need to be in the custody of an adult when ordering.
I guess this means no dinner tonight......

I broke out the violin....."Sad song for John" is the tune...I hope you do not suffer to much going to bed hungry. Albertson's had Choice Flank steak, and choice marinated tri-tip (Burgundy Peppercorn) at cheap prices. I marinated the flank in Yoshida's teriyaki sauce that I swear is five years old..that stuff may have a printed expiration date, but I am convinced it is a marketing gimmick to sell more. The Tri-tip, I used the reverse sear method......You heat the grill to 225 and throw the hickory chips on, smoke the meat for about an hour, and pull it off to rest (at 110 degrees). Reconfigure the charcoal for grilling and got it hot to sear the Flank steak.... I put it off to the side for 15 minutes while the grill grates heated, so as to rest....where I now seared the Tri-tip that had been smoked....it swelled up beautifully holding all the moisture in. T he nice thing about reverse searing, is that the Tri-tip would not need resting, that already took place after smoking it...I pulled it off at 130 degrees....The tri-tip will be chilled down overnight allowing us to carve it razor thin to pile onto crusty bread, served Au Jus after reheating the meat.

I love me some tri-tip the yokels here all like brisket and the tri-tip is harder to find than a virgin street walker. Tonight was fish and chips from a frozen food box from the Walley World and it was not to bad after all. I to feel sorry for John he hardly ever gets a good meal just real Mexican food and gourmet stuff all the time. There are sure to be days he longs for a deep fried frozen burrito or gas station hotdog with fake cheese nachos.

It is tough to consume these meals and I long for a Wendy's Baconator or Bojangles' Chicken with red beans and dirty rice. Just a common waffle with butter and syrup! A thin ham sandwich on white bread with yellow mustard and relish. It is tough but I will hold on as best I can for as long as possible.

It is a west coast thing, the beef butchered for markets going east from the midwest, butcher differently leaving the cut non existent...it was explained to me when i worked in the met industry back in the 80's, but I forgot more than I remember... en.wikipedia.org/wiki/Tri-tipI used to stop every week in Santa Maria on my way to LA from San Francisco...salsa and Pinquito beans...always a belly pleaser.
