Just did the prep work for rolled chicken deboned thighs. Stuffed with cream cheese and strawberry preserves with slivered almonds. Topped with bacon. All I have to do when momma gets home is press start on the convection oven. Eatin good in the hood.

Lunch was a smoked and charcoal grilled Chuck Steak smothered in Red Chile with beans. Left over from this past Saturday's Weber activity.

I can give you a photo in 48 hours but you wont like it. I am not much of a picture taker or poster to many steps but next time I make something good I will get it posted.

The trick is to pound the chicken flat season with lots of paprika. coat with cream cheese and any fruit or preserves then roll them up. The most important part is cut the rolls lower than the dish as it makes a delightful rich gravy. I do mine in a round baking dish and stand the rolls up and top with laced bacon on top. Cooking time is 400 for 40 mins. I washed my hands at least ten times preparing the dish and wiped the counter with Lysol because unlike beef, chicken can kill you.

I have finally lost more weight after staying at the same despite following my diet faithfully. I have been stuck at 238 for months, but I finally hit 234. 225 is my current goal, and then I may try for 200. I made 5oz hamburgers on onion rolls for lunch. I had white Cheddar on mine in honor of National Cheeseburger Day! 🐱😁🤠

Shrimp and clam Etouffee. My own from scratch recipe, 30 minute roux. Lotsa garlic and NM Hatch green chilies for heat. McIlhenny's Tabasco Sauce. Nice big shrimp. Thai Jasmine rice. The Trinity, of course. The clams and their juice make all the difference as does the anchovy sauce I added.
There has got to be a reason why Louisiana does not control the world. I cannot think of what it is.

Shrimp and clams are from your irrigation ditches? That would be nice. Just like harvesting abalone from the exposed reefs at low tide along the Pacific coast of northern California back in the day. No, this here shrimps, clams and sea scallops are from the frozen food case at a supermarket. Wild caught, supposedly. Every now and again I need a change from the beef, pork and chicken which makes up much of my diet. Eyeing the frozen wild caught Salmon. Pricey. May have to settle for the canned.

I just bought shrimp and clams probably do coconut shrimp and fried clams. The wife does not eat fish. I try not to eat anything from the gulf of Mexico around Houston with all the chemical plants around here and Louisiana. Radioactive toluene ditch food is not my style.
