Just had a delicious apple smoked pork loin and brown rice. Not smoked all the way through, but just enough to flavor it. Cool smoke for an hour and then wrap in foil and let it cool through.
Some peach cobbler would be delicious.
I'm full, time for a pipe.

Another frozen dinner night....
Just finished a Boston Market 2 piece meatloaf with mashed potatoes and gravy dinner. More than enough to fill my thin bodyππ. I must admit it was quite good.

Watching Martha Stewart on PBS. She's making meatloaf. She added shredded carrot and some other stuff. That's cool, and I do that sometimes. But, then she used raw onion and garlic. That's a no. Whenever I do meatloaf, meatballs, or stuff peppers, I ALWAYS saute my aromatics and let them cool before I add them to my meat mixture. Makes it so much better. You get none of that onion bite. If you haven't tried it, please do.

Last night's dinner was slow cooked brisket with a sticky maple sauce. Was fantastic. That is always a treat! For me, just about any cut of beef and especially a brisket, in a slow cooker, drowned in Guinness Stout with onions, carrots and celery.

Homemade chunky tomato and sweet onion bolognese ( beef and pork ) sauce served over fresh ribbon pasta. When I visit I do most of the cooking, keeping everyone super happyπππππ
PS Homemade roasted garlic and mozzarella bread...kicked it up a notch!!!

Coincidentally, I made shrimp tacos for dinner. Marinated in lime, garlic, cumin, cilantro, a few dashes of Red Hot for a Wee bit of zing (wife can't handle spice), salt, and some sugar to caramelize. Seared them in a hot pan. Charred some tortillas on the stove burner, then threw the shrimp on them, with a mixture of minced cilantro/white onion/red cubanelle chile, and topped with diced mango. I added some Caribbean scotch bonnet sauce to mine.
