Basically it’s prepared the same as a batter dipped chicken, instead of chicken you use steak. Absolutely delicious if made with a chopped steak or a thin tender steak.....either skillet or deep fried. Served with your favorite gravy👍👍👍 OK. Thanks. So there's no chicken in it. Gotcha. No ... that would be Chicken fried Chicken.

Just made for myself and one of my granddaughter’s a sausage egg and cheese biscuit. They are sleeping over again so I have to figure out what’s for dinner. My ex is still in bed and does not cook....might be one of the reasons she’s my ex since 1975😜😂 I was also divorced in 75,but I haven't heard from her since. I did gain 35 lbs in the two years we were married, and I still use her recipes.

A bowl of Red Chili and Pinto Beans.
Tonight gonna be more old Pot Roast with a nice gravy made from the pan juices and mushrooms, largely influenced by that bottle of Guinness Stout the roast cooked in. Yukon Gold taters, boiled. Green Caulfiflower. Might bake some biscuits.
Green Cauliflower? I have seen the orange, but never green.

Chicken Fried Steak and Mashed Potatoes covered in white gravy. chicken fried steak? What's that? Is it the same as steak fried chicken? One of the National Foods of Texas and sustenance for truck drivers all over the country. Only proper with white gravy. Julia Child was not a fan. I eat it once a month because of the calories.

Even though I’m going through some serious issues with my health, my ex is the mother of my children and grandmother to our 5 grandchildren. When we married she weighed 138 to 140 lbs, she’s now topping 325 and wonders why she can no longer get around. I try to help her on my good days plus I enjoy the time spent with my two younger granddaughter’s that slept over for the weekend. When visiting I also have use of her car and do shopping for her. This Tuesday I will use her car, need to go back to one of my doctors I saw last week. Guess my test results were not good......can’t wait until the joy that’s coming my way this Tuesday!

Just finished a Greek coffee. My second attempt and I got it pretty close to right this time. On the third boil, the foam collapsed. I don't have any idea why. Still tasted good enough to drink 2 cups.

Chicken Fried Steak and Mashed Potatoes covered in white gravy. chicken fried steak? What's that? Is it the same as steak fried chicken? CFS reminds me of Schnitzel, either Weiner or Jaeger. Since central and west Texas was settled by German immigrants, kind of figures that this dish would follow. Thin beef steak instead of veal or pork cutlet, sometimes pounded, dusted with flour, then washed with egg and battered. Fried in an iron pan. I prefer mine with a fried egg on top and served with sliced lemon- Holstein Style. That white gravy is reserved for the mashed taters. I have trouble explaining this to some Servers in Texas restaurants unless they are of German extraction and then they get it. At my restaurant, on Sundays, we served CFS. Our steak was a Ribeye. We drew a heap O'Texans down from Red River on Sundays and folks from far into southern Colorado. Best damn CFS in the State of NM.

The biscuits mentioned above came out just fine. Maybe the best I have had in a long time. Scratch made from King Arthur AP Flour, chilled bacon fat and butter pieces cut in, yogurt since no Buttermilk was on hand. One egg with the liquid. A little Turbinado sugar, salt and extra Baking Powder. Rolled out, cut into three inch circles, folded twice and beaten with the rolling dowl. Docked on top. Came out fluffy and light as can be.

Schwabische Linsen mit Spatzle und Saitenwurst. Prepared by a genuine Schwabischer. Ach so!
That is beans and franks with noodle for the rest of us.
A good lentil dish made with bacon and vinegar. Homemade Spatzle and a German sausage similar to a good quality American weiner.
This is the national dish of Schwabia. And where is "The Duchy of Schwabia" you might ask? Way down south in the land of hops where old time days are not forgot. Down around Switzerland, Lichtenstein, and Bavaria.
Good stuff.

I have made Spaetzle with this guy before. AP Flour and eggs, mixed, rolled thin on a sheet pan, sliced into small strips and pushed into boiling salted water. Making it on my own, I add a little water to the mix. There is a device like a potato ricer which works well, too.

I knew both the owner and his mother who was the head chef. Italian American to the core and very good people. Their Eggplant Parmigiana is a staple around here.

Last week I had the eggplant parmigiana you recommended last week, picked up a double pack at Costco. It’s better then any eggplant parmigiana I’ve had since moving down South. Hard to find fresh eggplant down “ heir “!

ok, I've got to know...why do some people spell, 'here' as, 'heir'? It’s been only me spelling “ heir “ as here....the heir is with the Sothern slang of North Carolina. The slang of heir down South sounds just like pronouncing hire......as in I need to hire a good carpenter.

It’s seems my Meds are playing havoc on my brain cells.....I just noticed I used “ last week “ twice in the same short sentence. That’s not usually me, plus I’ve noticed more than once in the past few days I’ve done it prior. I’ll be proof reading my own threads and let one of my doctors know WTF is going on! It’s most likely the Neurontine/Gabapentin that’s been increased in the last month!!

I certainly have had trouble with mine. New diuretic for a man with an enlarged prostate.

We mostly all enjoy eating and reading about eating. Here is a passage I recall from long ago about a memorable meal. The Writer is S.J. Perelman, a Humorist from much of the 20th Century and one of my favorites. He is writing about the memorable Herman Mankiewicz, a Prussian immigrant and Titan of the old Hollywood Studios.
"On a very hot midday in July, it seemed, Mankiewicz betook himself to a celebrated restaurant in Hollywood named Eddie Brandstetter's, much frequented by gourmands, where he treated his palate to two whiskey sours and a Gargantuan lunch consisting of lentil soup wtih frankfurters, rinderbrust (beef brisket) with spaetzle, red cabbage and roast potatoes, and noodle pudding, irrigating the mixture with three or four flagons of Pilsner. Then, eyeballs protruding, he lumbered painfully to his car and drove to his office at Paramount. Thrusting aside the handful of messages his secretary exteneded, he enjoined her not to admit any callers, however importunate, for the next couple of hours and retired to he private sanctum, with the Venetian blinds tightly drawn, he stretched out on a sofa, shielded his face with a copy of the Hollywood Reporter, and sank into a blissful snooze."
Few of us have an opportunity to enjoy lunch like that however great it sounds.

Had a light lunch of dolmades and hummus with a couple of deviled eggs. We were hungry, but had an appointment in 35 minutes. Though we were going to have Miller's hamburgers but had to rush to get to another doctor unexpectedly. So now we are in the waiting room and starving.
