We use that expression too. I live in the sticks now, but I was brought up in the big smoke of Belfast...mind you, compared to the States, Belfast is little more than a hamlet. When you can drive right into the centre of the capital city in the middle of the day and back out again within 5 minutes, it's not that big a city. But I've learned something new today about Roux. There are a few of the "Mother Sauces" you might want to try. These involve a roux. Of these, I think Sauce Espagnol might be the most enjoyable for you. It is good with most meats and even sausages like Bangers. You can take that sauce in different directions by adding other ingredients. I must check that out. Cheers.

Unless things have changed since the early 1970s, Ireland and Ulster are somewhat conservative about cooking. Foreign influences are not taken up. The pan grilling of meats and fish, boiling, frying and stewing are about it. "Sauces' come in bottles. You're so right. Especially with the older generation, their staple is meat, potato and veg... Day in, day out. Younger people would be more adventurous and have pizza, Chinese, Indian etc. Mexican has never really taken off here. It seems the Irish like things simple. Of course I'm grossly generalising. My experience was that people over there like food mild- fresh and tasty but not spicy. I ate well over there and enjoyed what I had. Mixed Grill, Broiled Trout, the occasional beefsteak, boiled potatoes, and veggies. Mixed Grill was memorable. Lamb Chop, Lamb kidney, a rasher of bacon. Very tasty and satisfying while the rain dumps outside. LOL!

How does one live in Europe and never heard of Roux, have you not watched any cooking shows from France?? Or enjoyed a meal in a Frenh restaurant?? I was married to an Irish woman, she was referred to as a one pot wonder. She couldn’t cook if her life depended on it!!! Once peculiarity I recall over there in some homes was a large pot- say 20 to 40 quarts on the stove and filled with heads of cooked cabbage in salted water. There they would sit all week becoming more "flavorful" with time. Now, there were practical reasons for this. Cabbage was plentiful and grown at home. A staple in most every meal and goes a long ways to feed a hungry mob. Potatoes, cabbage and meat, often boiled with carrots. Onion and garlic were rare. HP Sauce, prepared mustard, pickle relish all added some interest. A bland diet, to be sure, but tasty enough for the hungry and I was in no place to complain!

A big bowl of my left over Mac & Cheese and Beef steak tomatoes and Vadalia onion salad, fresh balsamic vinegar, herb dressing......been marinating since around 7:00am this morning 👌👍👍

Woke up starving and didnt have time to eat before I left. Grabbed a bbq sandwich from the gas station because they didnt have breakfast either. Hopefully I dont regret this decision.

So it works both ways. Sometimes what I eat makes the after meal smoke taste better, and sometimes what i smoke makes the following meal taste better.
And sometimes its both ways.
There is a place locally that makes their own style of steak sandwich. Its really good, with added spices not typically found in a classic steak sandwich. I get them take out and go to the park, have lunch, and follow it up with a smoke. OMG the smoke is soooo good. My tongue is prepared.
And the other way. After smoking a bowl, I often get a craving for a steak sandwich from these guys. So good.
With this particular steak sandwich place, the tobacco is Rimboche S.J. Billy Budd Blonde sometimes makes me crave a burger, and often times a burger grilled at home - not fast food, makes me crave a bowl of BBB.
So would love to put some emphasis on pairings of food and tobacco. What works, what works best, what doesn't work at all.

Simple dinner of Bratwurst and Tater tots. It was quick to make and good.
A what-a-burger commercial just came on and that patty melt looked delicious! It's been a while since I've had one.

You can ask for extra sweet onions and tomatoes with the Greek sauce on the side. The best Gyro’s down South!!! Oh, the lamb is extremely lean...NO FAT👍 You’ll be hooked as I am already!!

Tonight’s dinner will be smoked Nova Scotia lox, cream cheese on fresh crunchy bagels. I made up the lox & sweet onion plate last night. Let them marry together for at least 24 hours. It’s absolutely delicious 👍👍👍👍👍
