Later today, I shall make Chili Colorado. Had this in Taos on Saturday and realized I am not getting enough.
Beef Chuck Steak, cut into cubes and cooked long and slow in beef stock, onion, garlic and celery.
Red Chile gravy prepared seperately using the braising liquid above.
The two are married and slow cook together for maybe 20-30 minutes. This method results in the beef tasting like beef still but with the red chile overtones.
Served with either Red Beans or Black Beans and Quinoa. While rice is prefered, I got to try to reduce carbs.

To early to eat a meal, so one bakery fresh “ crunchy “ lightly iced oatmeal cookie.....need something in my stomach with the Meds I’m taking right now. No coffee ☕️ yet......still extremely tired!!!

Tonight is taco Monday... I love tacos. I love tacorillas. I love taco trucks, taco carts. The trend here has been a soft taco rather than the hard fried shell. That is more traditional Mexican. The fried shells are also good. Is there anything not good in a taco? I had a peanut butter and jam taco not long ago.

You hit a soft spot...used to pick em off the bush in Seattle when I lived there...you could never go hungry up there if you just picked the fruit off the trees...cherries...all of it. Now that is a place to eat...all the cultures there, you could never go wrong...Thai food, Chinese, just amazing.

Nothing better than good Mexican food...Michas in Tucson was one of my favorites. By the time you finished the appetizers, you were pretty much done in. Then came the main course...whooo, I gained some weight there.

What causes your sleep disturbance? If it is breathing issues, be cautious with sleep meds. That waking up frequency is a defense mechanism to restore breathing and improve oxygen levels. Sleep medications could prevent waking and you could suffer for it. If your sleep disturbance is pain related or another issue, then those meds could help. I do not mean to pry. I lost a friend this way. It was before apnea was understood the way it is now.

Giving serious thought to whipping up a mess O' biscuits.
While no "Pappy O'Daniel Flour" is handy, I do have King Arthur AP.
Probably use chilled butter and Crisco this time. The bacon fat biscuits were good but a little strong tasting.
Rolled out, cut, folded and beaten!
