Get your hands on a belt that someone is discarding or cheap at any thrift store or yard sale. I was unaware you have only one belt. Lol. I didn't mean it like that, although I do only have one belt. I'll use my Tormek if I need to sharpen anything. I use Tormex often to polish or a good fine grit stropping paste👍👍

400 grit all the way up to 2,000 grit sandpaper on a piece of hardwood works well with patience 👍

I go up to 4000. Here is a twin on my plug knife 4000 will put a nice shine to the blades edge and with some honing oil will give most steel blades a razor sharp edge.

After sharpening knives and re-profiling knife geometry for years, I use the following grit sizes of Japanese Chosera Waterstones with natural quaried Nagura stones:
800 2000 5000
Followed by stropping on a DLT XL 2-sided strop, DLT black compound side followed by DLT white compound.
Scary Sharp.

I use the Lansky knife sharpening system for a precision edge.

I’ve used this system for over 25 years and it’s found in some of the finest restaurants for the chef and their staff to keep their cutlery in top working condition, worth every penny. banjo I have delivered them units for years to restaurants, and they are good, but since they came out, there are electrically driven belts with angle guides that turn knife sharpening into a breeze instead of a chore. The tri-hone is a really great tool, but the user needs to be on his game with the correct angle. Threadsurrection!Having said the above to bambooshank , I have come to the conclusion that Bambooshank was righter than me. The belt driven unit has it's place, it can quickly give you an edge to face the task at hand, when daily cutting shrink wrap, etc. But...you lose the edge quickly. I recently bought the Norton Tri-hone, and I think that the progressiveness of the stones, deliver an edge that will last much longer than a swipe across the electrically driven belts. I suppose that both have their place, but if I was to buy just one sharpening system, I would go with the tri-hone, and getting the correct angle is far from rocket science....there is wiggle room in that regard. I was previously informed by watching butchers in the meat industry, that spent a lot of time getting their knives to surgical grade cutting instruments. They worked in refrigerated rooms and spent 8 to 10 hours cutting meats with constant pressure on the wrist...do that for 20-30 years, and carpal tunnel is not going to be your friend!

I use a hammer to break up my plugs. Never needs sharpening. And if you lived near John, the frozen plug shatters like tempered glass!
