Here in Cajun Land we grill oysters wrapped bacon, the bacon fat keeps the oyster moist and man a Pitt full of those little suckers go fast. That picture is fantastic. I want to eat whatever that is.

So do you prefer it crispy or not? Depends. If its super thin cheap stuff, crispy is fine. Standard stuff in your average store, I tend to lean more crispy but not really that picky. When its artisanal and thick or what I make myself, a light crisp on the outside. Too picky?

There are few things in heaven or earth that can match the awesomeness of a Pork Belly after it's been sitting at 225 for about 15 hours...

Very low temp and long hours of cooking will make any meats much more enjoyable, even beef, chicken or turkey👍👍

Lunch was broccoli slaw with cool bacon left over from this morning.
That bacon sure is versatile.

So here's a question: When cooking bacon, how many extra pieces do you cook?
When I'm cooking for myself, if I want 3 pieces of bacon on my plate, I need to cook 5. One gets eaten as soon as it comes out of the pan. Another is scarfled while cooking the eggs.
How do you plan for say, 4 people who want 3 slices each? You need 12 pieces plated, your gonna eat 2. Surely, whoever is helping you in the kitchen gets one.
That puts you at 15.
You should probably plan on one of the other diners blazing through the kitchen to snag a piece. Twice if you don't catch them the first time. At this point, the fourth diner will figure out what's going on and demand a sample well.
Then there's the dog. You can't forget the dog!
Now you're up to 19.
Man, cooking breakfast is stressful!
20
Now your helper wants another piece.
What the heck, might as well make it 2 dozen strips. It won't go to waste.

There's 3 of us, but my son stays up all night and usually isn't up for breakfast. If I want to just have bacon and eggs I cook 4 pieces in the skillet. If we want more, I can get 8 slices in the microwave. If more is wanted, then I put the whole pound in the oven.

Having a BLT on a hard crusted roll with a bit of Dukes mayonnaise. The beefsteak tomatoes are local home grown. Also purchased some fresh corn on the cob for later!!! Sweet tea on the side👍

Just got back to my daughters, did some food shopping @ Lowe’s Foods. Made sure I picked up a slab of hickory/ maple smoked bacon. Tomorrow I’ll be doing a thick cut, going to cook in a cast iron skillet. Eggs, home fries and homemade biscuits👍👍👍

The rule on cooking bacon is cook AT LEAST twice as much as you need. The longer I sit at the pan cooking, the more I eat. Then all the bystanders pick off the plate before its served.
That pork belly looks delicious too.
Now I want to go get my smoker ready
