There was a couple pounds of Red Tip Burley left over and I've been wanting to make some Perique. It's a simple set-up with an 8 quart pot and a couple of bar clamps. I'll update this thread after the first release and repressing of the tobacco. PS ... sorry about the color tint, I'm in a Quonset Hut with some green light panels.

After about 10 days, I'll release the pressure and allow the tobacco to re-absorb all that liquid and then press it again. Repeat at about 1 month intervals for at least 3 months. We'll see!

That's different then what I've seen at the L.A. Poche facility. They use wood barrels with a lid slightly smaller than the barrel opening. The juice seeps out the side of the barrels when under pressure and up over the top of the lids so the tobacco doesn't actually soak in the juice. Are you going to "turn" the tobacco at intervals?

You’ve had plenty of practice with whole leaf, I’m sure your Perique will turn out fabulously spicy.....enjoy!! I’ll keep my eyes open on further progress.

It is pressed hard enough that the liquid is above it and not "soaking" in it. This keeps the tobacco in an anaerobic environment and allows the organisms to do their work. Each time I release the pressure and allow it to re-absorb, I'll mix the leaves before re-pressing. It's the exposure to oxygen which helps develop that dark color.
