went to Bob Evans for dinner but ordered breakfast and they over-cooked the eggs the sausage and the home fries so it wasn't that enjoyable.

Lunched with a friend in Taos. Her truck was running. So, I bought her lunch at my favorite Mexican joint, the one with...... I had the mixed taco plate- chicken, pork, beef steak, rice, refritos, steamed jalapeños, jamaica. She had a squash, rice and bean burrito smothered in Red Chile.
Supper was left over steak on french bread with mustard.

Leftover blackeyed peas and cabbage with some sous vide tilapia and cornbread. When the leftovers are gone the diet starts again for real. Picked up a 6lb roast for $8 at the "managers special" meat case today so that will be meat for the next few days.

So, I was at Albertson's market picking thought the hams in the freezer and found one totally unlike the other bone-in shank hams. This was like a prosciutto. One of a kind in the bin. From Canada and smoked over apple wood. It was way on the bottom. I might smoke it on the Weber grill if it warms sufficiently. Otherwise, the electric oven. I am hopefull.

I had a bowl of herbed butter, leftover from the X-mas rib-roast...mixed it with egg, bread crumbs, and canned salmon. Supper was salmon cakes, homemade mac & cheese, and a small side salad...everyone was happy.

As I've mentioned here, in other threads, a couple of weeks back I was skiing with the fam and blew out my left knee.
Fast forward to where we are now, after MRI's and multiple exams, I've blown my ACL, but the good news is, according to a couple of different doctors, it won't necessarily require surgery. Just 8 to 12 weeks of PT and recovery.
All of that to say this, having to visit the doctor all of those times, I had to step on the scale, get my vitals, etc... every time.
I was probably as disappointed with the fact that I was up to 220 lbs. This is disappointing because a couple of years ago I got on the Keto diet and went from 285 (I'd been laid up with a bulged disc as a result of a car accident and ballooned up) down to 195 within about 6 months.
So, since 1/1/2020 I've been back on the Keto kick, meaning that all I've been eating is meat (all kinds of meat), eggs, leafy veggies, water, tea, coffee and a little bourbon n scotch here and there.
As of this morning I'm down 8 lbs.
Lookin forward to droppin another 20 to 25 lbs and then I'll reintroduce a few carbs here and there.

Now that WAYS, power walks, shovel front porch etc are done...onward to Schwan #662 toaster waffles, one cycle, add real butter & syrup, couple sausage links & nuke to usual plateful of mess. Add store brand k-cup cocoa & all to smoking room desk & continue with the papers. All kinds of "busy" thruout the day/evening

A nice baguette from The Sage Bakery of Santa Fe. SLiced and cut, spread with olive oil and on one side two slices of Salami Calabrese and on the other one slice of Mortadella, both imported from Italy. Eaten open face. Just a little of the rich and salty meats for a subtler flavor.

Search Taos high and low for Ham Hocks.
Smith's Foods (a Division of Kroeger) told me they no longer carry them. Albertson's told me they used to stock hem but no one has ordered them for a long time. Went to the independently owned and expensive Hippie food store and found three frozen Beeler Pork Shanks. Shanks! Even better than Hocks. Bought all three.
Beans or Bean Soups need a hock or shank. I do not understand why that is so hard to grasp except that New Mexicans do not used them with beans. They do use smoked pork necks in making Red or Green Chile sometimes.

While I cannot say my neighbors are friends, we all get along well and respect each other... some day we will downsize and get a smaller home and the spooky thing is not knowing what kind of neighbors you will have. There is even a show titled “Fear thy neighbor” .... there are some neighbors from hell out there. Indeed Larry, you are blessed.

Store employees are only there to obey the High Command. No Carneciria in the Town of Toad. I would have to go to Española where there are Mexican stores. I would not mind. I like Española. It would broaden me.
