Meatloaf made with a can of Campbells cream of mushroom soup is pretty hard to beat. Meatloaf using Kelloggs frosted flakes instead of crackers or breadcrumbs. Meatloaf is only bound by ones imagination.

Meatloaf sandwich and fries. I have not decided whether Meatballs or Meatloaf is superior. Similar preparation with some variances in seasoning but basically the same. Any discussion? I would prefer my meatloaf or the wife’s, but on the road you settle for what you get... it pretty much sucked comparatively, so I will have to make one at the hacienda this weekend as a faith restoration project. Cold weather sucks! I can’t wait to get back to Arizona.

Meatloaf is only bound by ones imagination. I used to make Meatloaf with crushed Matzo crackers. No pork, of course. Just lamb and beef. Meatloaf with pork sausage, ground veal and ground beef and Italian breadcrumbs. There is so much one can do. You are so right about the limits being imagination.

I like the customary topping of ketchup or BBQ sauce on the top and try to pour off the fat at the half way cooking point. At one point I purchased a fancy meatloaf pan that held the meat above the grease it made the driest meatloaf in the world. So I just went back to the glass kind. Funny for meatballs I use several types of meat but for the loaf a good 90/10 hamburger suffices. Since we are empty nesters I don't make the loaf very often as I cant get a one pound version down to pass muster.

I made up a special pan using two metal loaf pans nested. The inner one had holes drilled in the bottom to drain grease. It worked well, made a lighter meatloaf but also drier.I find adding diced bell pepper, diced onion, lotsa garlic, Italian parsley and enough bread to keep it moist. Now I just form it and bake it on a skillet. That ketchup glaze still works well. I like mixing meats. Ground local elk is a real treat because it is so lean.

I have made a buffalo mixed with pork fat to overcome the dryness and it turned out well. I have not had elk in a good long while but a friend gave me two big black bear steaks last year. I have been offered a dear hunt this year but it is to warm for my liking. Field dressing a Tejas whitetail loaded with ticks is not my thing. Growing up we would only harvest meat if it was cold enough o properly hang it. The art of processing wild game has been lost to most folks.

All this talk about meatloaf has my mouth watering!!! I'm apt to show up on someones doorstep this afternoon; oh ,we're having toco soup tonight,guess I'll stay home, but I'm sure a meatloaf is soon to come!

soon as done here & WAYS finished, Schwan #506 with added sausage link & shredded x-sharp cheddar nuked to usual plateful of mess. Add store brand k-cup cocoa & all to smoking room desk & continue with the papers.

Made a large pot of Lentil, Yellow and Green Split Pea Soup with barley and assorted vegetables. THe stock was made from ham shanks cooked long time. Thenit was partially pureed with a stick blender with a little milk and butter added to make a thick creamy pottage. Very warming. It was -12 degrees this morning although the day warmed to high 20s. I suppose I will become sick of it long before it finished. I always make too much of everything. It is hard to scale down to mini-portions. I need to be back on the Chuck Wagon, ship galley, hash house, etc. cooking for a crowd.

Encountered one of the Tamale Ladies from San Luis CO. They are old gals who sell homemade tamales from the back of their car. Excellent Red Chile Pork Tamales. So, I brought home one dozen. I have known her for a long time. Always a treat.

We stopped taking down the tree long enough for me to toss one of Kroger's large shrimp rings in the steamer with some Old-Bay.then we tore the little rascals up with some not so hot sauce{too light on the horseradish}and cole slaw with lime dressing...some Club crackers and a diet Coke ,and then back to work...I surely do hate tree work inside the house!!!

Tonight was the pork roast slow cooked in the crock pot with some Yukon Gold taters. I should have made the filets because it really did not cook long enough. Well that's what I get for sleeping to late earlier today.

next up after finishing this, usual Sunday brunch. eggs, mangled ham slices, x-sharp shred cheese, two platefuls of scrambled mess in GeoForeman grill. Drinks......me store brand k-cup cocoa, her same but de-caff instead. Keeps us going till mid-afternoon

Filet mignon, slow cooked spicy greasy fried tatters cooked till golden brown the topped with a nice Ca Colby and melted in, corn, Cheesecake Factory bread roll. It just does not get any better unless the Swedish bikini team drops in with German beer and spends the night, all while your wife is on a business trip.
