A beef shortrib, uncut and long smoked over charcoal, Squash and baked potato. Dog got the bone with plenty of meat on it. Amazingly tender and flavorful meat.

This evening it was...Beef Tips,Mashed Potatoes,Gravy,and Green Beans..That meal has been in the south all my life..For some reason it has never been one of my favorites..The wife likes it though and she's the cook.

walks, WAYS & overnite e-messages finished. Next, Schwan #662 toaster waffles (2 large), one cycle, usual adds & nuke to plateful of mess. Add k-cup cocoa, all to smoking room desk & continue with the papers. Plenty to do later

Visited my ex and her pal. She is still ill and has lost a lot of weight. She asked for KFC and all the trimmings. So, I brought a bucket, mashed potatoes, gravy, coleslaw, biscuits, corn. It was mostly pretty good except those potatoes. Man, that is the worse but people seem to love them. Personally, I ladle gravy onto the biscuits and call it good. Expensive stuff $43 for a 12 piece meal. I guess that corn was extra. Still, it is a pleasure with happy memories and that is what "Comfort Food" is supposed to be.

Half pound hamburgers with jalapeños chopped in the meat. Hot but good. And air-fried krinkle fries. Followed with peaches and cottage cheese.

I spent a year in New Mexico (which is pretty much like the old one). By the time I left, even the Dairy Queen vanilla ice cream tasted like jalapeños.

Buckwheat Udon in miso with vegetables and roast pork. A miso broth with sherry, rice vinegar, a little tomato juice, garlic and ginger is a wonderful thing. Into it goes the chopped vegies to cook and roast pork. The cooked noodles are added at the end with the hard boiled egg slices. I wish I had sliced nori to garnish but seaweed is rare in the high desert of New Mexico. Oh, yeah, there is a little chopped green chile in there just to keep it on track.

Could you substitute nopalitos? Seaweed has entirely different flavor from cactus. Salty and umami. However, napoles add a mild bitter taste and have a thickening effect kike okra. I imagine that could be good in a noodle soup like dish. I have used it in Calabacitas and other stews.

Last night we went to the Az. Wilderness Brewpub. I had the Arizona Trail Burger, it was a half pound grass fed burger cooked to medium. Thick slabs of bacon, roasted jalapeno’s, Pepper Jack cheeses, onions tomatoes and lettuce with barbecue sauce. The fries were cooked in duck fat. A couple 24 oz picketpost pete pilsners to wash it down. I got home and felt like I could burrow down for the winter after that meal.
