Browned hamburger, set aside. Diced potatoes browned, near the end added onions and garlic. Returned meat to the pan, added 1/2 c salsa and 6 lightly beaten eggs. Folded it all with a spatula until the eggs were set, and sprinkled with shredded Mexican cheese blend.
A one skillet meal simplifies breakfast and cleanup!

Last night we went to the Az. Wilderness Brewpub. I had the Arizona Trail Burger, it was a half pound grass fed burger cooked to medium. Thick slabs of bacon, roasted jalapeno’s, Pepper Jack cheeses, onions tomatoes and lettuce with barbecue sauce. The fries were cooked in duck fat. A couple 24 oz picketpost pete pilsners to wash it down. I got home and felt like I could burrow down for the winter after that meal. I have not been to a restaurant or pub for over six months. Except to pick up take away food. I look forward to the day!!!

A chopped vegetable salad with Bob"s Big Boy Blue Cheese Dressing. A hash made of my beans and sausage, curried rice, Bob Evans bread stuffing, roast pork in adobo sauce.

Planned herbed bacon wrapped Chimayo smoked chicken breasts with spicy Spanish Rice and homemade tortillas, going to let the chicken sit for another day in the marinade, and going to eat some Curly's pulled pork because the store was practically giving it away.

It's 84 and 68% here. ☹️ It hit 90 yesterday afternoon but cools down once the Sun drops. I would not rely on the NWS for information about this area. I used to believe they averaged the differences between their Taos Airport and Alamosa, CO Airport instrument data. Some years back, they put in an instrument farm up in the Valle Vidal at about 9,500 feet elevation. I do not know how they derived their numbers but they seldom reflect local conditions.

Yeah, we're 2 miles from the George H. W. Bush International Airport which is the official reporting station for Houston, and the weather at our house is often very different from what the weather man says. It probably has a lot to do with being surrounded by trees instead of concrete.

Cheese grits (or Polenta) with butter, Pecorino Romano and real Parmesan. Cooked overnight in a crock-pot. Diced Spanish Chorizo added.
