Opened a bottle of Super Tuscan I made around May 2018. Planning to give a couple bottles to someone and wanted to be sure it was still good. It was great. Very dry, astringent. Would be great with a good steak. One of the best wines I've made.

Would be great with a good steak. One of the best wines I've made. I admire your skill and effort. Wine making is difficult given the diversity of wild yeasts waiting to ruin your efforts. I sure had my troubles making fruit wines here years ago. One of the reasons I started mashing grains and distilling.

I sure had my troubles making fruit wines here years ago. One of the reasons I started mashing grains and distilling. Thanks. I try. I've learned a bit this time around. Many, not all, of my wines are coming out pretty good these days. I've got a bit of a cellar going now, so the wine I make today can age while I drink stuff from the cellar. This summer and fall I want to try something new, called extended maceration - where, instead of stabilizing and clearing the wine as soon as fermentation is complete, you let it sit with the grape skins for several weeks. It's supposed to create a more complete wine and make a young wine taste aged sooner.
