Just a skillet meal with ground sirloin, diced potato, diced carrot, diced onion, diced red bell pepper, green chile and seasonings.
Good and simple. One pan meals are about all I am up for these days.

Stopped at Subway this and picked up some footlongs. I got a club with all the veggies. I don't know why some people don't like Subway. I always enjoy Subway, especially during the warmer months. My warm weather standard is their Tuna Salad with lots of vegetables. Winter, Meatball Marinara with Provolone, bell peppers, red onions and spinach.

I agree, Ron...Chester fried Chicken, Subway, Arby's etc...have ruined the truck stops. Loves is the Walmart of truck stops.

The trend in food is to corporate branded restaurants. People do not seem to want "exploration". They want what they know and trust. Sad because real foodies want local expertise.

Breakfast:
Two hard steamed eggs mashed into a ripe avocado and dry mustard. A little mayo and pico de gallo added. Spread onto whole wheat toast and topped with a Romaine lettuce leaf.
Turkish Coffee.
