Pan-sauteed, seasoned chicken tenders on a bed of arugula, roasted beets and butternut squash, feta cheese and walnuts, with a dijon mustard/balsamic vinegar dressing. There used to be a Greek place here called Yia Yia's that served a nice grilled salmon salad with walnuts, some kind of fruity vinaigrette (raspberry, maybe?), etc. Closed several years ago, sadly. Sounds good. I'm on a diet and I've been making a lot of salads somewhat like that lately.

Another journey to Mrs. Rios Thai Kitchen in San Luis, CO. Tom Yum soup with vegetables, Number 5 of 5 hot. Massaman Curry with Shrimp, Number 4 hot. Amazingly good. Cook comes out and gives us a toothy grin, greeting and laugh. Not many folks here go with the full on heat. I feel like I am floating afterwards. Love it!

As per the wife’s request, Caprese stuffed breasts… fresh basil, tomatoes, Mozzarella, and with a twist, cooked bacon. Because everything is better with bacon! Garden salad, and Kalamata/ Olive Rosemary bread. Off to New Mexico to the tribal lands, no snow in the forecast!

Fillet Mignon from Sam's Club - cooked in the Ninja. And store bought cheddar stuffed breaded jalapeno peppers cooked in an air fryer. I buy these steaks by the 4 pack and vacuum seal and freeze each one individually. 500⁰F for 10 minutes in the Ninja - just to the point where the blood/juice turns brown. Great flavor to the beef. Seasoned with a sprinkling of Omaha Signature Seasoning and 5 thin pats of butter laid on top. Excellent! And part of a bottle (on a diet) of dry red wine. A Merlot that had been aged 6 months in an oak rum barrel. Wow! trailboss Thanks for your post about a year ago about the Ninja. Love it! I think that was me, Monty. Or maybe I chimed in when you 2 were talking about it. I dunno, but I know I commented about it sometime early last year. Regardless, steak looks tasty!

to be Schwan #717 breakfast bowl, add cut up sausage link & shredded sharp cheddar, nuke to plateful of mess. Add k-cup cocoa, all to smoking room desk, eat & continue with the papers. hope a quiet day ahead

Looked up Mrs. Rios kitchen on Google maps, the food sure looks scrumptious. My grandma I am told was from Chama, really close by! Chama, Colorado? Or, Chama, New Mexico? Chama, Colorado is a big deal. That means you "IN" here. If you come this way and encounter locals, make sure that fact is brought out. Your status is elevated. Just saw my grandma’s obit, John. Actually she was born in San Pablo Colorado, next door to Chama. Ooops… I did a search to respond to John, didn’t realize that it was a still active 2021 thread…

Antipasto salad Rigatoni with Sausage, peppers and onions. Some really excellent bread. The waiter said they had a no show on Basa Milanese, Sea bass filet breaded pan fried, so I got a half order on the house.
Water with lemon.
@ Roma restaurant on Sahara in Las Vegas. Sleeping in tomorrow since Vegas goes on Pacific time, thinking I will need it.
