Texas Red chile, Cornbread. That cornbread looks fluffier than what I grew up eating. Looks almost like cake. Cornbread is a very regional thing.

Had to give a ride to San Luis CO to a car less neighbor. 40 miles, round trip. He bought an early supper at my favorite Thai Restaurant. Massaman Curry with shrimp and pork with Jasmine Rice on side and Thai Iced Tea to drink. Number 4 out of 5 range heat. "5" being reserved for Thai officials and the State of Colorado Fire Marshall. Some perspiration and my eyes went haywire from the capsicum fumes coming off the bowl at first. Eventually, I settled down. Love it! SO good. Cannot wait to go back! I have been there many times and have had one dish. The same thing each time. I cannot stray to try anything else. Love Thai food!

Following Scott's lead, a large salad with diced chicken roasted last night for the dogs. I am sure they will not mind my taking some breast meat. followed by ripe Limburger Cheese and whole wheat bread.

Just got back from a local restaurant called the Beach House. It's located in the public park where I grew up. The building was constructed about 1929 and was the beach house for the public beach on Lake Decatur (Illinois). Now the upper level pavilion has been converted into a restaurant. Great food. I had a tenderloin filet with a bacon and bleu cheese topping, on garlic mashed potatoes and green beans/snow peas. And three glasses of a nice Pinot Noir. Fantastic!
I remember cleaning the picnic tables and sweeping out the pavilion every morning when I worked for the park district in the 70's. I lived in the park - in a house not 100 yards from the beach house. My dad was the "custodian" of the park and the greenskeeper of the 18 hole golf course there. (The park is 187 acres.) Brings back a lot of memories.

I do like the different variations and often make it from scratch. Had nachos tonight with the leftover Chile, and dark Dos Equis to wash it down.

We'd set out "Reserved" signs on different rows of tables for family reunions and company picnics. Sadly that all stated dwindling in the 70's - so that now there's little use of the pavilions. Only on Memorial Day and 4th of July are the pavilions, and the parks, packed with people. In the 60's, the park was packed every single weekend all summer long! Times change, not always for the better.
