Went to town today for more medical consultations. Lunch was from "La Careta", the food wagon. Had a Club Sandwich. Good eating but could only manage half. So, the rest went to the dog. Not prepared in the traditional manner. This should be a double decker cut into quarters and served with potato salad. They must belong to a different club. Your dog loves you. A Lot!

Did a 3-pound venison roast in the oven. I don’t do many that way but this one turned all right. Very slightly overdone, but still quite good. With Brussels sprouts and a baked potato and a nice glass of Dago red.

around noon'ish, brunch with the ol gals. Pancakes/waffles/English muffins/ sausage links Same drinks, them de-caf, me cocoa...same as always. Help with cleanup then adult fun

Krusteaz Protein Pancakes with Maple syrup, just a little, and butter. Best I have eaten in a while. Low heat is the secret. bacon and pancakes fare well with that approach, John. (Low heat) Cooking bacon at low temp is a great compromise of cooking off the fat without overcooking what is not fat and yields more bacon.

Going to a Styx concert tonight, stopped at Texas Roadhouse, didn’t feel like waiting 45 minutes for a table and went to Chili’s. Great wait staff, but the food just isn’t worth it. I guess that one good thing about getting older is that you aren't worried about being seen going to a Styx concert. I actually always liked them. I always listen to Blue Collar Man at 11 on the volume knob. Actually it was a great concert. I always figured the with the politics and departure of Dennis DeYoung that the vocals would suffer, but the guy that stepped in does a great job, quite a showman with the talent. Tommy Shaw is incredibly talented on vocals and guitars, stage presence. They brought the house down.

The wife picked this up from the World Market today...they taste the same as when the van drove through the neighborhood in the 60's. Leftover ribeye and chicken thigh tonight, supplemented by fried potatoes and onions.

Oven baked roasting hen with carrots, and cabbage from the crock-pot, no bread, butter or potatoes, but we did have the usual coffee...we didn't really miss the starch, but I do remember thinking some stuffing might be nice.

No bacon. the best results for me have been on a sheet pan in the oven on moderate low heat. I gave up bacon and most sausage when I started having stomach problems. Trying keep the animal fat to a minimum.

Trying keep the animal fat to a minimum. My wife started baking bacon a few years ago to avoid the mess of frying. She puts the cookie cooling racks in a jelly roll pan. That way the grease drips off. Works great.

Slices of applewood smoked bacon in the oven. "Dang the pancreas, full speed ahead", said Captain Nobody! Seriously, one slice will not do much harm, I hope.

Progresso Italian Wedding Soup. Sadly, they changed the formula. Now it is made with sausage rather than small meatballs and way too much pepper. So, I added potatoes, cabbage, carrots and chicken stock to tone it back down to what I remember.

Corned Beef and Cabbage with potatoes. Tastes good, the brisket is a little tougher than I expected, even after four hours of simmering. Letting it cook on. A honey mustard sauce.

Starting the morning off with two poached eggs on a bed of cheese grits, partially de-germinated. Coffee.
Since it is still black as night, I am heading back to bed to read until daylight.
