We had a big pork roast, boiled cabbage, and peas for lunch. The best pork roast I have ever eaten. Magnalite makes a difference, right Brad?

My step mom attempted to make gumbo tonight. It's not bad food, but it's NOT gumbo. During my adventures I always stopped in Louisiana and found a gas station with a kitchen off the interstate. Gumbo for the parking lot, boudin balls for the road.

I'd definitely eat it again, it was good and filling. It just wasn't gumbo. I can't cook a sirloin and say it's prime rib and get away with it, haha.

The worst gumbo I ever had was at a restaurant in South Louisiana. But that was an exception. My grandmother made good gumbo, but my mom never made it. My mom made a lot of things that weren't very good to eat, but I ate it anyway and was grateful for it. The love in it was the best seasoning.

after needed snoozie, Schwan #404 one piece breaded chicken bake, #769 mix vegs nuke. Now have bag of #961 potato wedges...portion planned for Tues. Haven't had for awhile. Usual sups to TV for 6pm & newsfeeds. Later, Jeopardy with store brand tea & cookies for company.. might snack a bit after...f.ball & WWE Monday nite Raw to follow...sure it's scripted but those folks really are athletes, even the fatties, doing double flips off the top ropes etc. Will have a large cigar handy for the mayhem, both rassling & f.ball.

Breakfast was two eggs, the last slice of leftover Christmas ham, and Mississippi long grain rice.
Taking a break from the plants of the Nightshade family: Potatoes, tomatoes, eggplant, bell peppers, and chilies. Trying to get this inflammation under control.
Supper will likely be more of Marie Callender's meatloaf with rice, peas and carrots. Skipped lunch.

Gumbo for the parking lot, boudin balls for the road. I love gumbo, but I really haven't eaten much of it. I have it whenever we visit New Orleans - and I made it there at the New Orleans School of Cooking once. Turned out good. But - the one time I made it at home, it turned out a bit too salty. I need to try again, but my wife doesn't care for it, so I haven't gotten around to it.

Dinner with the in-laws last night...baked ham, corn bread, potato salad, black-eyed peas & stewed tomatoes, and a cabbage casserole that stole the show. A table full of baked good followed, with tea or hot coffee, but most of us just sipped along on the coffee, with no space for even a cookie.
Back home tonight, just pancakes and coffee.

Pork ribs slow cooked in a crock pot with Sweet Babt Rays BBQ sauce all day, mashed potatoes, garlic bread for dinner. While that sounds really tender and delicious, I am wondering if it is a bit greasy? Do you have a technique to reduce the grease? Do you brown the ribs before they go into the crock pot?

They weren't greasy at all. Very lean. My wife prepared them - but I don't think she browned them first. They were purchased already cut off the bone and were fairly lean looking. They were called "Boneless Pork Country Style Ribs" - already trimmed. www.walmart.com/ip/Pork-Country-Style-Ribs-Boneless-1-1-1-9-lb/51259140

as slow as I now have to operate with things involving hands, PITA phone calls from "SpamRisk" especially poor English foreigners, most about Medicare stuff, hanging up on most but still time wasting. Suppose good thing none of 'em know my cell phone #. Mine is on a piece of paper in back room. Only use it if power failure, none during the Bflo blizzard.

They have more fat. Makes sense with the Country ribs. I will have to try that.
