Thanks!
Never had Pozole growing up, the dishes although excellent were pretty narrow given in that was what they knew.
Digging this dish, the family had a wow! Experience.

Breakfast underway, finally. Two poached eggs, one English Banger, hash brown potatoes and coffee. With this darn stomach trouble I have, avoiding wheat and gluten for now. So, no more bread or noodles/pasta for a while to see if that helps. Celiac Disease? I might also have to switch to Polish Potato Vodka..... Not for Breakfast, though.

Food has become so tasteless to me that I am starting to rely more on those “meal-replacement shakes” in a blender, with a raw egg.

Food has become so tasteless to me that I am starting to rely more on those “meal-replacement shakes” in a blender, with a raw egg. I know about this and share the feeling. Eating can be difficult. The shortage of teeth in back for grinding food and my unhappy stomach. So, I stocked up on soy milk, bananas, mangos, nectarines and berries to do the same. I have protein powder on hand. Waiting for the bananas to ripen. This seems to take a very long time as they are picked so green now they often rot before turning ripe.

And fruit as you mention. I have an old Osterizer blender from the 50’s that still works a treat. All is not lost!

I add kefir but thicker yogurt is also welcome addition.

From checking the Celiac Disease organization, distilled alcohol does NOT contain gluten even distilled from grains like wheat, rye and barley. Thank goodness.

Pozole is better the second time around. Bummer that the Hominy plays havoc with my wife’s type II diabetes. My wife has type 2 also. She will only eat hominy in pozole. I, on the other hand will eat a whole can with butter, salt and pepper for a snack.

Finally had the opportunity for food. First meal since yesterday's breakfast. Combination of too busy and the work related stress ruining my appetite aggravating my stomach problems. I managed to eat an avocado last night. Two cups of my own bean with bacon soup and a can of tuna packed in olive oil dressed with pickle relish, chopped celery and a little mayonnaise. Feeling better since laying of gluten containing breads and noodles. We shall see if that improves my situation. I ordered gluten free flours from King Arthur and Bob's Red Mill. I got to be able to make Spaetzle and baking powder quick breads like Naan, pancakes, rolls and BISCUITS! We shall see how that turns out.
