I had to make a dash trip to town so stopped for lunch at my favorite Mexican joint. Carne Asada Plate. A belly buster. They use thin sliced Rib Eye steak. the usual sides and sauteed hole scallions. Their best dish. Had to nap when I returned home. New Mexican carne asada— a sovereign dish if ever there was one! I’d give a pretty penny for one right now. 🤤

Since going Non-Gluten I have craved bread. So, I made gluten free Naan with Buckwheat flour, Masa de Harina and King Arthurs Gluten Free AP. Soy milk and Moroccan Extra Virgin olive oil. Baking powder, more is needed. Salt, sugar, onion powder and King Arthur's Pizza seasoning mix.
Dough has some trouble staying together without gluten but careful handling helps keep it together. Griddled. Came out quite tasty but the texture is odd. Bread like but breaks down in the mouth without chewing. I like it and will keep on with making it better.

My wife's sister gave us a pan of chicken enchiladas a while back (with her scratch-made enchilada sauce). Pulled it out of the freezer tonight and popped it in the oven. Easy and tasty.

Every household should have a pan of enchiladas in the freezer. Ditto a Lasagna. Chicken Parmigiana or Chicken Divan is another to keep on hand. We never know who might arrive. I am glad to read you enjoyed the bounty of your neighbor.

Near brunch time, had some dry store brand cheerios to munch on after walks earlier. Will be 2 Schwan #662 toaster waffles one cycle. Will add a sausage link & usuals, nuke to plateful of mess, k-cup cocoa, to back room, eat & to the papers & junk mail.

Porterhouse on the Weber. Direct over coals, 4 minutes per side. Rested. Came out Medium Rare. It appears 3 1/2 minutes per side would be more to my liking. It has been a long time since I seen a steak like this. I have forgotten the timing. With baked potato, sauteed portabella mushrooms and sliced tomato. Only ate about 2/3 of the Strip side. So, some nice leftovers for another meal or two. Lovely texture. No gristle.

Sirloin strip marinated in Goya marinade grilled in a cast iron skillet. I didn't time it, but used a meat thermometer and took it out at 135 degrees. Sides were sauteed summer squash and zucchini with bacon, onions and butter, boiled cabbage, and mixed vegetables. With my wife being able to only eat a little bit these days, a small strip is plenty for both of us. Makes for a cheap meal.

In town for the MD visit. Lunch at my favorite Mexican joint. Two and only two Barbacoa Tacos with rice and beans. Normally the plate has three. I am following my new MDs order to lose the G.D. weight! Still at 311 pounds, sigh.

Tonight's dinner was Dal Makhani (Indian lentil and red bean curry) over jasmine rice with spicy onion relish and roti bread. Since we lost our local Indian restaurant, have had to learn to make the curry house favs at home. Plus Creme Brulee for dessert. The kids loved the burned sugar tops. Cheers!
