Last night's NY Strip was a real disappointment. That is all for me and Smith's Foods meat department. Too many weird tasting steaks. The only beef roasts they offer this time of year are Chuck Roasts and those look terrible. We have an independently owned market in Taos which offers much better beef but it is expensive, all beef is but there's is especially so. So, fewer steak dinners but better quality seems appropriate. If I could find someone here to go in on a half beeve from a local grower, I would stock the freezer. So far, no one I know wants to. Breakfast was two poached eggs on a bed of oat groats, buckwheat and lentils. Warmed in the air-fryer so it has a nice crispy exterior. One slice of uncured bacon for emphasis. Tea with milk. Onwards. BTW, this being my Birthday, not planning anything today. Happy Birthday John!!!!

Insta-pot pork ribs tonight, finished in the oven with a Carolina style sauce. Sides...organic applesauce, and Cheesey hashbrowns.

Lunch was a Birthday Burger at the Wildcat's Den in Questa. A double with cheese, bacon, mushrooms, extra raw onion and the usual other plant matter. Great Fries and an Arnold Palmer to wash it down. Worked a NY Times Crossword Puzzle while waiting and eating. Happy Birthday buddy. I wish you many more. I turned 73 last month.

Brunch time after earlier munching on store brand frosted mini-wheats. (3) Schwan #482 toaster pancakes one cycle. Add usuals..real butter & syrup, two #411 sausage links, nuke to plateful of mess. k-cup cocoa, to back room, eat & to papers/snail-mail

Sirloin steak and a loaded baked potato. I wanted to visit our local steak house for today's dinner until I noticed their on-line menu. The $39 steaks are now $59. All the side dishes are extra $. So, I settled for a cheeseburger at a local diner instead. Local supermarket steak that was in the freezer for months. Sous vide 2.5 hours at 135 degrees in Goya marinade then quick brown in cast iron skillet. Any steak house would be proud.

Maybe in a day or two I can try to get into town again for them. So, there will not be any solid food for a few days. I sure am tired of this problem.

Staying at the historic Gadsden Hotel… a very nice hotel that maintained all the old tile work, but updated it well. A really nice in room Jaccuzi, I know how cooked spaghetti feels.😉

Soon to be Zweigles skin-on white dawg, 9mins on small G.Foreman indoor grill, no bread, just cut up, eat with fork. 1-cup Musselmans smooth applesauce for side. To TV, eat & to the newsfeeds. Later Jeopardy, store brand tea & choco chip cookies. No eating after 8pm by design

I have greatly reduced wheat gluten in my diet. Easy substitutes. If you are making a bread stuffing, look for Canyon Bakery Ancient Grain Non-gluten bread. Sold in many stores. For gravy thickening, instead of flour for Roux, two good substitutes are corn starch or Zanthum Gum. Zanthum Gum is made from corn starch and both are great thickeners. Ixnay on beer and ale. Hard Cider good. Wine good. Just my experience.

Breakfast was two poached eggs on a roasted hash of Oat groats, buckwheat, and lentils. Two Meyer's brand link sausages on the side. Yorkshire Red Label Tea. I am out of milk so I used Kefir. This I cannot recommend, folks.
Got a nice Chuck Roast with vegies and a gravy in an iron pot in the oven. Low and slow. Ready by this evening I should think. Will add red wine and more mushrooms later. Keeping it somewhat bland. A little Piri Piri and Black Pepper in the gravy. Got to have a little zing in there.
