Working towards dinner. A NY Strip, mashed yams, Brussels Sprouts, Spinach salad with da Blu Cheez. Will likely eat only half the iron pan grilled steak. The other half tomorrow?

Nothing like a good steak sandwich the next day on bread that holds up well.

Nothing like a good steak sandwich the next day on bread that holds up well. Oh yeah ... with sautéed mushroom and onion topped with melted swiss. I'm drooling!

Visited the nearby little bitty diner just over the border in Colorado. Red Chili smothered burger with fries @ $9.50 and a $4 Dos Equis. Well, the burger was served on a slice of white bread and the red chili was kind of bland, not bad, but I could go to another level. Kind of pricey for what is was. Little place in the middle of a just about no-where with a population of 300 is going to really struggle and we will have to pay a premium as they sure will not make it on volume! Happy they are here.

Appears I will be making ground elk red chile this evening. The elk is from last year, so it is time to use it up. Have not decided whether to include beans.

The chile came out great.
Started out with julienne bacon slices to get some fat in the pan along with the olive oil. Then diced onion, garlic, green and red bell peppers, and carrots. I always add diced carrots to the consternation and confusion of my New Mexico native neighbors. I like the flavor they add. Then the Chimayo NM heirloom Red Chile powder. Then came the ground elk, lean as an Anglican Parson's bank account. It mixed well with the bacon fat and olive oil. Simmer a bit and then comes the previously made red chile gravy. The whole thing simmers a while longer and then is spooned onto my pinto beans with ham hock. Grated white cheddar is sprinkled on top.
As I type this, perspiration is sweating off me and a feeling of great satisfaction permeates.

Just a quick ham sandwich. Closing tomorrow on the house, clearing everything out and will smoke my last pipe here tonight. Shame it’s raining or I’d sit by the lake and have it. Gonna miss it here

Man o Man! Dined on Foster farms chile cheese dogs in my oven in the tractor today... followed by a frozen Michelina’s pasta meal... good but pales in comparison.

Early morning toasted half a whole wheat English muffin. Spread cream cheese, top with Nova Scotia Lox and marinated Vigalia onion slices. A mug of coffee almost ready in the French press. Then early morning meds.

Then early morning meds. One of the foods I miss from living in Los Angeles is the Lox Plate at Art's Deli in Studio City. A mound of excellent Lox, cream cheese, red onion slices, capers and a basket of outstanding bagels. Enough for two or three.

Yesterday was my son's 31st birthday, so we took him out to his favorite Greek restaurant. I had a gyro plate with Greek lemon potatoes. Dessert was Baklava Cherry Cheesecake. He had a Gyro with fries and 2 orders of Loukoumades. He is still in a seeming coma.

A beef burrito smothered in some great red chile with refritos on the side with more red chile. Lettuce, tomato, onion, cheese on top. All courtesy of The Wild Cat's Den of Questa NM. What a meal! No one leave hungry, ever.
