Dinner last night was fajitas. Haven't had them in a while. They hit the spot. Irish fajitas? Potatoes and cabbage on the side? hahaha. Unfortunately no. We had them Mexican style. Well, as close to Mexican as I could get. I wore a sombrero while eating them.

Roast Pork Loin with a nice sauce made from the deglazed pan with wine reduction, sallots and HP Brown Sauce. Brussels Sprouts and Gold taters. Not bad.

The boston Baked Beans finally finished for my granddaughters birthday tomorrow...10 hours of slow cooking, with maple syrup, Molasses, and a smidgen of rum...tasty! And they should be even better tomorrow.

@lonecoyote, it's spaghetti bolognese. That's the bolognese sauce. The spaghetti hadn't been cooked at that time.

It was good... And I always do enough for 2 days worth so it'll be even better tomorrow.
I often find that it tastes better the next day.
