Any of you Texas boys know "Opa's" wursts (sausages) from Fredricksburg?
Found a pack of the beef sausage at the little store in Questa and had to bring them home.

I had home made (in a jar) chicken korma with pilau rice.
Home made korma never matches the stuff you get from the Indian restaurant. The lack of a tandoori oven might make a difference too.

Okay, itβs a frozen meal......let me tell you.....if you enjoy eggplant parmigiana. Costco sells a double pack for under $14.00. Itβs made by Angeloβs.....itβs EXCELLENT πππ You can not make it at home from scratch with the same quality and large portions. Each tray is a large dinner for two. Iβm in between finishing 1/3 of the tray. I HIGHLY RECOMMEND YOU GIVING IT A TRY!!!

It is the cheapest thing on the menu at the family Italian restaurant down the street.

Dinner for two nights, plus another tray for the following month. Here in NC I can not find an Italian restaurant that makes an eggplant parmigiana you canβt suck thru a straw...lol. Angeloβs is the best Iβve had down here, other then my homemade. If Angeloβs used more ricotta cheese it could pass for homemade πππ

Last time we ordered the tiramisu, the teenage girl that made it stood around to watch us eat it as it was her first time making it for the restaurant. Really, look where you live! You must have been thinking that you wanted to get away from it all when you moved there. You have to give up some things to get others. Maybe you could move to a village in Italy, but then you wouldn't have the fine New Mexico cuisine.

I lived on The Island of Malta for a few years, so one of my many visits throughout Europe traveling overland was quite an experience food wise, superb cuisine πππππ. Iβd take a catamaran from Malta to Naples, rent a Land Rover and off I went, the good old days.

The company founder really is named Michael Angelo. It was he and his mother who started the company. I got to know both of them when they were still in San Diego before relocating to Texas and a more business-friendly environment. Very good people who take quality seriously. Just about everything the company produces is good but the Eggplant is the best.

Last night was ribeye marinated with Worcestershire, balsamic vinegar, tobasco, oregano, tarragon, crushed white pepper and pink salt. Cooked over nine Stubbs charcoal with Hickory smoke chips in a small Old Smokey. Cooking time 40mins for medium rare. If you have not used balsamic in a while give it try again.

I like most all of Michael Angelo's individual dinners. Great food. They have the family sized packages at Sam's Club, but the wife can't eat pasta and I am the only one who eats eggplant.

Remembering my vegetarian days decades ago- Eggplant stuffed with fried tofu to make something which needed to be cut with a knife so I could imagine eating a steak. LOL! Finally, I gave up and just started up with the steak, again.

Finally, I gave up and just started up with the steak, again. Well, my mom used to fry eggplant in cornmeal when I was a kid, and it was a treat. I have had it a bunch of ways since, mostly good. The Eggplant Parmesan satisfies me and I don't have to think about veal. I remember bringing my calves from the auction, one under each arm, and those big eyes. They lived in paradise until they got sick and died. Bacon is the number one cure for vegetarianism, with T-Bones running a close second.

Today's anniversary dinner. 2 steaks (the one my wife bought was far too small), garlic fried green beans, onion and mushroom with honey made, and home made spicy oven chips. Washed down with a glass of burgandy. It's all gone now...
