Have you ever slow cooked the roast? You should be able to pull it apart similar to a pulled pork if cooked at a low temp. You bet! Ropa Vieja, Pot Roast and Cabbage (in lieu of corned beef brisket), Beef Bourginion, Mexican Barbacoa style. Usually in a crock-pot. It comes out close but not the same. Why did I have to list all that? Now, I am hungry! A big crock-pot works best. No,it’s not exactly like a brisket you can slice, but the beef roast is a great substitute if the brisket cut is not available near you. i prefer Beef Bourginion, maybe because I’ve had more than my share of briskets in my lifetime!!

You can consider yourself fortunate. Brisket is a cut of beef seldom enjoyed in my house. So, it is still a treat for me. Sorry you are not eating. Hope the tests go well.

Heading into the kitchen to heat up Red Chili with Red Beans and a tortilla. Grated Cheddar and a dollop of sour cream. Might have to place a fried egg in there someplace.

If I ever head up that way, I will check it out. That is going to be tough because that means no Lengua Tacos at Romero's Cafe. Maybe I could just hang out and enjoy two meals!

Those lamb gyro’s are great nuked for 60 seconds the next day, I’ve done that often. Rumor has it that Arby’s will soon be serving venison sandwiches here in NC👍👍👍

Thinking about that Patty Melt I did not make on National Cheeseburger Day.
8 oz Angus burger,
White Cheddar from Vermont,
Slice of onion,
Cornichons.
There is a nice white gravy left over from recent CFS. Might have to apply that. Maybe not. Seems like "guilding the lilly".

That Patty Melt was a YUGE success!
Almost made a second one before reason and restraint kicked in. Thank goodness there is a photograph of Father Francis P. Duffy, Chaplain of the 69th New York, above my desk. A glance and I am upright, firm in the knowledge of what is right. Restraint, moderation, duty, responsibility, sobriety.

You could team up with an undertaker and do discount burials for people who have passed away from eating the fried chicken. Paddy, you’ve got a warm heart....lol. Too many funerals lately. The mind tends to wander.

I cant get Del Taco here stuck with Taco Hell and the mystery meat. The original Del Taco is in Barstow Ca and they prepare food in huge portions. Anyway toast with homemade marmalade.

Morning start is (yuk) prune juice to get the bowels moving...followed by some cheese grits. When I have done some work then I will be having a hunk of that wonderful boudin warmed up with light pumpernickel bread...maybe more grits.
Ted...that pecan apple butter sounds great...bought in a regular supermarket?
