Left over fried chicken without any breading. Wish I could just eat fried chicken skin and throw the rest away. This morning was better sourdough biscuits and milk gravy made with the fried chicken pan scrapings.

Food/Drink pairings I like:
Roasted unsalted cashews seems to prepare my palate for virginia perique combinations.
Coffee, especially Community Coffee Medium, Starbucks Veranda Blonde, go well with Billy Budd Blonde.

Just finished the Marinara Sauce. It will sit out overnight waiting for the meatballs and Spaghetti Squash tomorrow. In the crockpot.
Marinara Sauce:
Two diced onions, several garlic cloves, I lost count, Sweated in olive oil. Eye-talian Crushed tomatoes and tomato paste. Red Wine, Anchovy Paste, Fine diced green olives, Fine diced bell pepper, Fine diced green bell pepper,
Bay leaves, Mexican Orgenano, Basil, Pepper, More Extra Virgin Olive Oil.
Tomorrow, into the crockpot it goes with the meat-a-ball-a-s and mushrooms and two halves of a spaghetti squash. Cook on high for four hours. I am told that the squash can then be forked out into noodle like threads and the meatballs and sauce ladled on top. A little grated Parmesan and I got a meal without all the carbs of pasta.

Toasted dark pumpernickel bread with James Keiller & Son Dundee Orange Marmalade. Itโs an outstanding marmalade with thick cut orange peel without the stringy bitter pith. A mug of fresh Dunkin Donuts Columbian coffee โ๏ธ
Watching the news last night, Dunkin Donuts announced they will be dropping the word โ Donuts โ from their brand name. Now known as โ Dunkin โ !! Thatโs about as brilliant of a corporate decision as when Coke decided to change their original recipe .......that went over well with Coke lovers๐

The meatballs have joined the home made marinara sauce in the crockpot. Sadly there is no room for the Spaghetti Squash so that will have to be cooked seperately in the oven.
The mushrooms go in about two hours from now.

I cut the spaghetti squash in half, remove the seeds, sitting on a 9โx 9โ glass brownie pan, fill with 1 1/2โ of water and steam cook covered with a Saran type wrapping in the microwave for 20 minutes. Doesnโt heat up the house in the Summer with the oven on. The spaghetti squash comes out firm and easy to pull with a fork. Your making a very tasty and healthy dish all in one, enjoy๐๐๐

Funny you mention that...wife and I were talking about going back in the not to near future...tough on old bodies riding for 8 hrs in an S-10 truck...with a small dog who has epilepsy. But we did it this time and love Texas...so...it will happen again.

Pulled pork, black beans and Mexican shredded 3 cheeses stuffed into soft corn tortillas wraps. Steaming over a double boiler, I much prefer over baking or frying. Very tasty, plus a fairly healthy dish for dinner. Sour cream chipotle with finally chopped sweet onions added to the mixture to add texture. Fresh mint sun tea on the rocks๐๐๐

That sounds good! Agreed about the steaming. Something like that is also good layered like lasagna. They call it "Enchilada Pie" in these parts. Of course, that is usually smothered with Enchilada Sauce or Chili gravy.

Ben, I had the same exact BBQ grill as you have...mine rusted out after 2 years on the porch with an overhead...just the humidity did it in...kept the grill top and use it for the fire grill underneath the grill surface. Put the parts in an old heavy gauge aluminum grill body from the 60's...works like a champ. Using mesquite charcoal you get a hell of a hot fire...needed a solid body to keep the coals in. Now I use a combo of post oak and mesquite.
Dinner was left over steak and brussel sprouts.
