I had tilapia with mango salsa, broccoli, and a baked potato topped with cheddar and cottage cheese for dinner. Very nice. Randy, Tilapia and Weak fish are two of my favorites πππ. The mango salsa goes perfect on tilapia!!! What is "Weak fish"?

I'm not eating it yet, but this pot roast I started earlier today is tonights dinner. Changed out the usual white mushrooms for some shitake. I'm pretty excited! This is the before, browned the meat and everything went in the pot.

Prepared yesterday afternoon around 4:00pm......a Nova Scotia lox platter layered with sweet onions that I much prefer let marinate at least 24 hours. A fresh baked rye bagel and an herb cream cheese I whipped together. GUESS WHATβs FOR DINNER TOMORROW NIGHT πππ

Baked ziti with meatballs, my own tomato sauce, fresh garlic from the garden, lots-a cheese- a nice Parmesan and very ripe Brie. Man, it was good. My only complaint is no red wine. I am so far away from stores and cannot keep any on hand, it seems.

I am so far away from stores and cannot keep any on hand, it seems. Haha. Plus, once it's opened you can't leave it otherwise it goes off.

Homemade Minnestrone, tomato based, with pasta, meatballs, Cecci Beans, White Beans, and all the other stuff which makes soup great. What a country we live in!

Dared the rain and drove down to Lafayette to Prejean's famous Cajun restaurant. I had seafood gumbo, catfish, alligator, oysters, shrimp, crabs, boudin balls, frog legs, creamy spiced corn,and French fries that I didn't have room for. For you Yankees, that's pronounced pray-johns.
