2 baked ham & cheese ....not nuked Hot-Pockets. I shared with Luke...I can not believe how much this dog missed me being here. My son, daughter in law and 2 grandchildren here surely didn’t. I was needed here to watch the two dogs overnight, will be leaving here for Knightdale in about an hour👍👍👍 Luke slept on my bed with me last night, his head next to mine on the pillow. He still will not leave my side. “ ONLY IF HUMANS WERE AS COMPASSIONATE “!

I had 2 frys (complete with hash browns) this morning. I love hotel buffet breakfasts. Had a 6" subway for lunch. Diet starts tomorrow. 😬 Hello Paddy, how did last night work out? Just finished that^^^^^...now a glass of Cafe con Leche (Cuban coffee, also known as Cuban gasoline, with hot milk, sugar) Nothing will warm you up better than a Cafe con Leche.

Breakfast this morning was a fried egg with a length of Texas made "Smoked Beef Sausage" and Hashbowns. Sadly, the sausage is a real dissappointment- bland and greasy. I have a two-pound length of it so it will be with me for a while. Oh, well, that is what HP Sauce is for, right?

Slice up that beef sausage and sauté with onions and top with HP sauce towrds the end while still in the frying pan 👍👍👍. Won’t be bland anymore. |

A slice of fresh pumpkin pie with that white crap created in a Lab......Cool Whip.....something about Cool Whip and pumpkin pie 👍. A side of hot cocoa.

It is not bad just expecting something more exciting. It was intended for Breakfast with eggs and I should have stuck with Pork. I can use it in other stuff. There is a large pot of very think beef stock made with short ribs, beef shanks, marrow bones and Back Ribs. I was thinking of a Gumbo with this sausage and some of the short rib meat I reserved from the stock. Or, it might become a bean and sausage stew. Who knows? |

Word just arrived there is a plethora of packaged elk coming my way. Much of it is ground (minced). This means Elk Empanada production with Big Bobby Trujillo- The King of Empanadas. So, what is an Empanada? The closest analog I have seen is a Cornish Meat Pie. That may not help much so here is a photo:

There is an authentic Mexican bakery here in Knightdale, owned & operated by a local Mexican family.....their empanadas are without a doubt the best I’ve had in years. Very reasonably priced as well👍👍

Just finished my usual roast beef, pastrami and provolone cheese on pumpernickel with chips and home made dill kosher pickles...learned from my wife's sister. She is the best cook, I've run into. Sure enjoyed watching and helping make relish and pickles to take home with us from Kentucky. You know those Kentucky women...they can cook 'bout anything.

Sure enjoyed watching and helping make relish and pickles to take home with us from Kentucky. You know those Kentucky women...they can cook 'bout anything. Wow! That does sound good. I need cold cuts and you inspired my next selection. |

Macaroni with heavy cream, parmesan, and smoked guda. Then I browned some sweet sausage with garlic and tossed it briefly with some spinach and a shot of balsamic and ate it over the pasta.
