Too many baby back ribs, lightly smoked with apple and pecan wood, cooked by me of course. Also some brown rice.
Cooked 2 slabs of baby backs for the 3 of us plus a few others. The others cancelled... the ribs did not go to waste. Need I say more?

Tonight’s dinner will be a baked calzone with mozzarella, peppers and onions. Dinner will be ready @ 6:00pm unsharp.....lol. A glass of Kendal Jackson 2013 Cabernet Sauvignon is called for with dinner tonight 👌👍👍 My dinner for tonight will probably be a can of Spaghetti-Os 😭💩 No Spaghetti-Os here. However, Chef Boy-R-D Raviolis, Dinty Moore Beef Stew, assorted cans of Chili Con Carne, Spam, Corned Beef, Canned Chicken, dry beans, rice, canned vegetables on hand for the Winter days when nothing runs and I am stuck at home. You know, 25 degrees below zero (F). That can last a week to ten days. Sigh....

Not eating anything as I just left the dentist, but they are opening a new Arby's by my house. I can eat Arby's 5 days a week. The Krispy Kream is held up because they can't hire any workers. There are way more jobs than workers in Houston these days. Interesting problem. Their business plan calls for prices at a certain level and that means wages at a rate which is not competitive to attract workers. I wonder what they will do? Simply not expand their business by opening new stores? We have such a vast "army of unemployed" here. It is hard to imagine this situation in Houston.

However, the difference in the work habits of people in NM and Houston couldn't be more different. I believe that Krispy Kream will need to use robots, and will likely have a hard time competing with the 4 Vietnamese donut shops, or the 3 Shipley's Donuts (a long time Houston chain that has run Duncan and KK out of town twice before). If they open, then I will eat only one donut per month from them. They didn't involve me in their business plans.

Yes, NM is challenged by less than diligent and conscientious worker habits. I wonder how much disparity in wages between the two states?

You can make a lot of money here if you have skills, and even the McDonald's jobs are offering extras to keep good help. Anyone who has some snap and works can move up pretty quickly in most any business. The difference is that you have to show up on time every day and stick with it. Not exactly the hereditary culture of the more rural areas of NM. That lifestyle is very attractive until you need money. Then you have to do without.

I actually ended up with a can of Beefaroni "Throwback Edition" "More Beef!" "More Cheese!" "More Flavor!" So why did they ever change it? Lambrusco over ice on the side.

Work often interferes with family life, hunting season, wood cutting, etc. "Work", meaning a job, is what people do when all else is settled. Always been that way going back to the Territorial and Colonial days, if one reads the history of the area.

Had a bbq chicken pizza in a wee place across the road from the hotel. It was good stuff. The waitress didn't write down my order and got it wrong. I hate that!

In about an hour I’m toasting a rye bagel topped with cream cheese and orange marmalade thick cut made by Wilkin & Sons in England since 1885👌👍👍

Just finished a baked potato and some brussel sprouts...small slice of steak...which I didn't eat because "baby" was looking at me pitifully. Guess who got the steak??

I typically don’t eat breakfast but today I’ve been up since 4:30 EST so I’m hungry. 5 egg whites, turkey sausage on a whole wheat roll with salt, pepper and ketchup.

Kona coffee and an English muffin with Kentucky honey on it.
Maybe an omelet later this morning...fresh green onion tops and cheddar cheese most likely.
