In town for lunch so over at my favorite Mexican joint, the one with the real Mexicans, "Chicken Monterey". Grilled Chicken Breast, Topped with scallions, mushrooms, cheese in a special secret home made green chili sauce, Served with rice, beans and topped with sour cream. Corn tortillas on the side. That is one good dish.

shortly to be Schwan #506 ham/cheese omlet, add shredded cheddar & a sausage link. The always nuke to plateful of mess. That + k-cup cocoa & all to smoking room & continue with the papers.

A nice store bought pita bread, grilled in olive oil in an iron skillet so it puffs up for splitting and then stuffed with Vermont White Cheddar and returned for melting. Just the thing.

Last night finished up some ground elk... Broke it up and skillet fried it with a light spray of olive oil. Added ancho chili powder and cumin. Ate it right out of the skillet with corn tortilla chips. Pretty dadgum good. I’ll do that again.

Ground elk is a staple around here. Goes into burgers, meatballs, meatloaf, tacos, burritos, tamales, empanadas, Texas style Chili con Carne, gravies, stews, Bolognese Sauce.

Ribeye, Shoepeg sweet corn, hand cut fires some greasy some golden crisp dipped in ketchup with Cholula green pepper. I love ribeye steak we cook them one at a time and split it three ways because the Chihuahua eats more than we do.

I love ribeye steak we cook them one at a time and split it three ways because the Chihuahua eats more than we do. A ribeye can be a wonderful thing. That was my preferred cut for many years. My taste has changed and now I find them too greasy preferring a T-Bone or NY Strip. I tend to eat steak very rare.

Rub it through the chute and cut off a slice. I never could get the concept of well done, one might as well eat stew meat boiled in water.
