Vile, inedible Spam. Grad school poverty cured me of Spam (as well as $6/gal Nogales tequila). But I read an article that a trendy place in NYC was serving its version of Spam prepared in various “new” ways. Anyway, I got some (Hot ‘n Spicy and Jalopeño are good). Sliced it VERY thin and did it up in a lightly greased skillet until CRISP. Doggone good for breakfast, or cut the slices in half and put ‘em on a lightly toasted Sweet Hawiian slider bun. Most palatable. But straight out of the can? No way!
I knew a guy that used SPAM blended into Olive Oil as his "energy drink" during endurance events … super high calorie with plenty of salt.

To each his own. I eat Spam MAYBE twice each year. Mostly with eggs in the morning. I grew up with it fried and topped with a pineapple ring for supper at least once or twice each month. Just lower salt, lower fat plain flavor. None of that fancy stuff, bub!

They had a 5 Guys in Flagstaff and I would hit them about twice a month … great stuff!

that’s what I do when I got to 5 guys.
They had a 5 Guys in Flagstaff and I would hit them about twice a month … great stuff!
The last time I went to 5 guys, a burger, fry and drink was the better part of $20, and I had to eat it in the truck, no indoor dining. I scratched them off the approved burger list.

NY Strip, par cooked over charcoal on Friday, coated with Rufus Teague Heat and wrapped tightly in foil in the oven with twice baked potato. This time with a load of cheese!

Had fried catfish for lunch. Only a couple of greasy spoons and the 2 most expensive restaurants in the area are open on Sundays. Greasy spoon catfish was pretty good. If you can't do that and chicken fried steak well you can't make it. There are a lot of restaurants around here that seem to be recently closed. Maybe after the Covid-19 thing dies down it will get better.

I used to like that back when Alfies Fish and Chips was a thing. I even bought their brand of vinegar. Not so much anymore. Out west it was "H. Salt, Esq. Fish & Chips". Back in the mid 1960s, they were very good quality. Malt vinegar! Alfie's was really good, but it went away. All we had in Humble was Long John Silver's, which is greasy and extremely variable.

El Monterrey graciously packed a small burrito with egg, cheese, and sausage. Just for me. I added two slices of sandwich ham. Heated in the microwave oven for 90 seconds and then onto a hot iron skillet for crisping.
